Tonight, I am hosting a Halloween party at my apartment. So far I have made Queso Dip (in the crock pot), roasted pumpkin seeds, and a pumpkin chocolate chip bread. Here are the recipes. So far everything tastes great! The Queso dip, I came up with myself and added some bacon to it. As Ina Garten would say, “How bad can that be?” 😉
Jenna’s Queso Dip
1 lb. ground beef
2 lbs. of velveeta cheese
5 strips of bacon cut into cubes.
1 jar of salsa
1 package of taco seasoning
Directions. Brown beef. Once beef is done cooking, drain out all the grease, and set beef aside or in crock pot. In same pan cook the bacon. About 10 minutes. Cut the cheese into cubes so that it melts faster. Dump last 4 ingredients into crock pot and cook on low for 5 hours.
Spiced Pumpkin Seeds
1 1/2 tablespoons margarine, melted
1/2 teaspoon salt
1/8 teaspoon garlic salt
2 teaspoons Worcestershire sauce
2 cups raw whole pumpkin seeds
1. Preheat oven to 275 degrees F (135 degrees C).
2. Combine the margarine, salt, garlic salt, Worcestershire sauce and pumpkin seeds. Mix thoroughly and place in shallow baking dish.
3. Bake for 1 hour, stirring occasionally.
Chocolate Chip Pumpkin Bread
2 cups sugar
2 cups canned pumpkin
1/2 cup canola oil
1/2 cup fat-free vanilla pudding
4 large egg whites
3 cups all-purpose flour
2 teaspoons ground cinnamon
1 1/4 teaspoons salt
1 teaspoon baking soda
1 cup semisweet chocolate chips
Preheat oven to 350°.
Combine first 5 ingredients in a large bowl, stirring well with a whisk. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, cinnamon, salt, and baking soda in a medium bowl, stirring well with a whisk. Add flour mixture to pumpkin mixture, stirring just until moist. Stir in chocolate chips.
Spoon batter into 2 (8 x 4-inch) loaf pans coated with cooking spray. Bake at 350° for 1 hour and 15 minutes or until a wooden pick inserted in the center comes out clean. Cool 10 minutes in pans on a wire rack, and remove from pans. Cool completely on wire rack.
Yield: 32 servings (serving size: 1 slice)
