4 large eggs
4 large egg whites
1/2 cup low-fat milk
1/4 cup Gruyère frittata cheese
2 tablespoons chopped fresh parsley
3 small red potatoes
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
4 scallions, thinly sliced
1. Preheat oven to 400.
2 Whisk the eggs, milk, egg whites, and milk together in a large bowl. Stir in the cheese and parsley. Set aside
3. Spray a 10-inch oven proof skillet with nonstick spray. Add potatoes, salt, and pper and cook until potatoes begin to soften and brown. 6-8 minutes.
4. Heat the butter in the same skillet. Add scallions and cook, stirring frequently, until softened. 3 minutes. Return the potatoes to the skillet. Add the egg mixture; reduce the heat to medium-low and cook, undisturbed, until the bottom of the frittata is firm. 8 to 10 minutes.
5. Place skillet under broiler and broil 5 inches from the heat until the frittata is set in the center, 3 minutes. Cut into 4 wedges.

For Christmas, I got the Weight Watcher’s cookbook called Comfort Classics 150 Favorite Home-Style dishes from Ben’s aunt. Thanks! Today, we were in Minneapolis and stopped at Whole Foods, my first time ever going to that store. They had all sorts of different kinds of cheeses. I ended up picking up some gruyere cheese. I just have always bought Swiss cheese if a recipe ever called for this kind of cheese. Gruyere cheese is so good, and expsenive! I think I paid 9.74?? It almost reminds me of Parmesan cheese in away. I didn’t pick up much when I was there. Got some fig jam, some star candies that remind me of dots, bulgar, dried cranberries, and wheat berry.
I was going to try making Ina Garten’s mac and cheese recipe but when browsing through the new cookbook I found this recipe. They’re so many other recipes I want to try in that cookbook and can’t wait to try them. There is one recipe for An Asian type dish that has Edamame, cucumbers, carrots, and a peanut sauce served over whole wheat noodles. Doesn’t that sound good????. I would give this recipe 3 out of 5 stars. It was rather greasy, and didn’t have very much flavor in it. Could have used some more spices.
