Ingredients from Simple and Delicious
1 package lemon cake mix
1 pkg. (3oz.) orange gelatin
2/3 cup water
2/3 cup canola oil
4 eggs
Frosting:
1 cup of confectioner’s sugar
3 to 4 tsp. orange juice.
Mix first 5 ingredients in large bow.Pour into greased and floured 10 inch fluted tube pan.
2. Bake at 350 for 35 to 40 minutes or until tooth pick comes out clear.
3. Combine confectioner’s sugar and enough orange juice to achieve desired consistency. Drizzle over cake.

This is a recipe from a new magazine I found called Simple and Delicious from Taste of Home. If you go to the Taste of Home website you can see what all the recipes are in the current issue of this magazine. The only sad part is you have to register and subscribe to their magazine before you can see the recipes. What kind of magazine does that? Every recipe magazine that I’ve ever bought on the shelves allows you to go and view the recipes for free online. Cooking Light lets you do that. This magazine has a ton of good looking recipes in the latest issue. For this cake recipe, you can really taste the orange and it’s super sweet. I only had a box of yellow cake mix with me, so I used the juice from one lemon to make up for the box of lemon cake mix.
Do you like my new cake pan? I got it at Le Gourmet chef store in Albertville, MN. There is this huge outlit mall there by Minneapolis. I’ve picked up quite a few kitchen utensils and pans there for cheap. Also, on our little shopping adventure, we went to Caribou coffee. They had the BEST lemon poppy seed cake . It was so moist and delicious and you could really taste the lemon. I am on a mission now to find a really good lemon poppy seed cake recipe.
