S’mores Granola Bars
5 cups rolled oats or rolled mixed grains (I used a 5 grain mix from a health food store)
1 14 ounce can sweetened condensed milk
1/2 cup honey
3 tablespoons unsalted butter, melted
pinch salt
2 cups chocolate chips
2 cups mini marshmallows
1. Preheat oven to 325 degrees. Line a 13×9 inch pan with parchment paper so that it comes up on the sides.
2. In a large bowl, combine oats, condensed milk, honey, salt, butter, and 1 cup of chocolate chips. With wet hands, press the mixture into the prepared pan. Bake for 18 minutes on the center rack of the oven. Remove from oven, sprinkle on marshmallows, and place on the upper rack of oven, and bake for 5 minutes more to toast the marshmallows. Allow to cool completely.

Here’s another S’mores recipe for everybody and this one is super easy. I think that I will be taking these for breakfast this week instead of my normal muffins, although lately I’ve been having cereal or oatmeal. Forgot how good warm oatmeal is in the morning. Ohhh, wouldn’t some marshmallows and chocolate chips be good in some oatmeal? Note to self.
That would be a fab breakfast.
Hopefully this week goes by fast, because the next week I have off! I think I’m going to make some more jam and try some new recipes to keep me busy. My mom and I were planning on going to Yellowstone National Park the week that I have off, but we just decided not to go since we both have expenses coming up that we have to pay for. Like for instance, I need a new oven for our kitchen. A double oven would be great. The oven in our house is ok right now, it’s just that one of the larger front burners isn’t working. Wish it was! It would be so much handier to have 2 larger burners when canning stuff. Question, why do they call it canning when we are just putting food into jars? I’ve been wondering that this weekend. Shouldn’t it be calling jarring instead?
