Bacon and Cheddar Waffles


4 3/4 ounces all-purpose flour, approximately 1 cup
4 3/4 ounces whole-wheat flour, approximately 1 cup
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons sugar
3 whole eggs, beaten
2 ounces unsalted butter, melted
16 ounces buttermilk, room temperature
Vegetable spray, for waffle iron


Preheat waffle iron according to manufacturer’s directions.

In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.

Ladle the recommended amount of waffle batter onto the iron according to the manufacturer’s recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.


The weather here has been in the upper 20’s this week. Yesterday was really nice. I noticed that people on the East Coast have been getting lots of snow days lately. We haven’t had one single snow day yet this winter, where we get work off. I guess it’s just because Northerner’s are used to going to work when it’s -22 degrees out and snowing.

Here is a good recipe to make  on a snow day for brunch or breakfast. This is Alton Brown’s recipe for Basic Waffles. All I did was add some bacon and cheddar to it. About 4 slices of bacon chopped, and 1/2 cup of cheddar cheese. You can’t really see any bacon and cheddar in the waffle picture its self, but trust me. It’s there. I liked the bacon in these waffles, but not so much the cheddar. Could hardly taste it actually, and I used a mild cheddar. The recipe made quite a bit of waffles, about 6 of them.  We haven’t had waffles in awhile, so it was nice to bring out the old waffle iron again.

This weekend, I plan on making some Pork Ragu. I also plan on making some Valentine’s Day food. Gotta go shopping for all the stuff first. Friday is our normal shopping day depending on whether or not Ben has meetings to go to.
