Chocolate Banana Cakes (weight watchers recipes)

Happy first day of May! When I woke up this morning, there was snow on the ground. Not cool!! I’ve been wanting to plant my garden outside but at the rate it’s going, I won’t get to plant it until Summer. We found some mint already coming up from last year and my chives and rhubarb are already coming up. No Spring flowers yet like Lilacs or lillies. :(

Believe it or not these cupcakes are only 3 points. I didn’t even use a can of diet soda to make these either. Diet soda is crap anyway since it has chemical sweeteners in it. All these cupcakes have are cake mix, banana, water, and eggs. They came out so moist and delicious too.

The hard part was coming up with a frosting. At first I was thinking, that I wanted to make a cupcake resembling a banana split. I took some marshmallow fluff and strawberries and tried mixing that together. Ben really liked that, and I thought I was going to put that filling in the middle of the cupcakes, but it wasn’t thick enough. Then I tried making just a regular frosting with butter, confectioners sugar and strawberries, and I didn’t quite have enough confectioners sugar. It turned out really runny.

I ended up going with a box of instant vanilla pudding, a can of crushed pineapple, and 1 container light cool whip for the frosting. Heck, these cupcakes are so good, that you don’t even need the frosting on them. That recipe for frosting has been used in a recipe before called Sunshine or Celebration cake. That cake is a mixture of mandarin oranges and yellow cake mix, another delicious cake recipe.

1 box of chocolate cake mix 18.5
1 cup of mashed bananas
1 cup of water
1 egg white
1 large egg.


1 box of instant vanilla pudding mix. (you don’t need to make the pudding as directed by the box)
1 can of crushed pineapple.
1 container of light cool whip.

1. Too make frosting mix vanilla pudding and can of crushed pineapple (with juices) in a bowl. Gently fold in cool whip. Let cool.

2. In a large bowl mix together 1 box of cake mix, mashed bananas, 1 cup of water, and eggs. Line cupcake pan with cup cake liners. Add batter to cup cake pan. Bake at 375  for 18 to 20 minutes or until tooth pick comes out clean.
