Healthy Potato Skins

It was kind of hard to figure out the points plus for this recipe. This is the only time you’ll ever have to scoop out the middle part of the potato and bake it. I used a whole medium russet potato to figure out the nutrition in, but my guess is with the potatoes scooped out the points plus could be dropped to maybe 3? Dare I say 2? I don’t know.

I just love myself a potato. Mashed with lots of heavy cream and butter, twice baked, baked, fried, potato chips, you name it. Gotta to have some sour cream and bacon with them too. Use reduced fat cheddar cheese and instead of oil spray the potatoes with cooking spray to get them crispy on the outside.

As some of you may know, I am a big fan of Food Network. I’m watching Diner’s Drive In’s and Dives as I’m typing this. Food Network has been irritating me lately. All they seem to have on now are stupid reality food shows like health inspections. Seriously? Do I need to stay and watch what the outcome of that will be? Oh god, will they pass or fail? Who cares? There’s also a new one coming out where Anne Burrell helps restaurants find their new executive chef. No thanks, I’d rather watch cooking shows and learn how to make something new. I’ve got 2 new recipes I’m trying from Melissa D Arabian this week and 2 from Cooking Light’s magazine. Can’t wait.

Instructions

4 medium sized russet potatoes
4 slices of bacon
8 tablespoons of fat free sour cream
4 oz of light cheddar cheese
2 green onions
Cooking Spray
Salt
Pepper

Directions:

1. Preheat oven to 400 degrees. Spray potatoes with cooking spray and season with salt and pepper.
Bake at 400 degrees for 30 to 40 minutes.

2. Take the potatoes out of the oven. Cut them in half. Scoop out the insides so that there’s just enough potato
around the skin. Use the leftovers for soup or something else.

3. Spray the potatoes again with cooking spray or butter spray to give them more flavor. Lay them on their flat side
on the baking sheet and bake again for an additional 10 minutes.

4. Take them out oven and sprinkle with cheese. Place back in the oven until the cheese is melted.

5. top with your favorite potato ingredients such as bacon, green onions, and sour cream.
