This Tropical Quinoa Fruit Salad screams Summer and it’s packed with kiwi, mango, pineapple, and toasted coconut. The dressing I chose for this salad is a honey lime dressing and I was debating on using poppy seed dressing. Poppy seed dressing is one of my favorites and goes on everything but this honey lime dressing is perfect. The dressing has 2 tablespoons of honey, the zest of 1 lime, and the juice of one lime. That it is. This tropical quinoa fruit salad will be on your dinner table in no time. It would also go really well at a Summer BBQ.
Oh yah, and happy Friday! I’m so glad this week is over with and it has been the longest week ever. When I’m at work, I like to dream up of different recipes in my head, because that is what I do all day long is day dream. SERIOUSLY. I’ll jot down the recipe on my notepad next to my desk and think of ways I can tweak the recipe to make it even better. This week I was thinking a lot about different ideas for fruit. I’ve been kind of slacking on the Weight Watcher recipes and tracking and I promise that I’ll post some more soon.
- 1 cup of cooked quinoa
- 2 kiwis, diced
- ½ of a pineapple, diced
- 1 mango, chopped
- ¼ cup of toasted coconut
- 1 lime
- zest of 1 lime
- 2 tablespoons of honey
- Cook the quinoa in a sauce pan in 2 cups of water. The quinoa takes about 10-20 minutes to take and it is done once the quinoa has absorbed all the liquid.
- While the quinoa is cooking, finely dice all the fruit. Turn your oven on to broil and toast the coconut until brown.
- Make the dressing in a small bowl. Zest the the whole lime and juice the lime. Add in 2 tablespoons of honey and stir well until combined.
- After the quinoa has cooled for awhile add in the fruit, toasted coconut and lime dressing. Stir all the ingredients and serve.
