I’ve been trying to gradually cut back on my carb intake. If I can eat low carb for at least 2 meals a day and 1 low carb snack a day I’m pretty proud of myself. Trying to eat every meal low carb, is really hard and that is why I’m taking it slow. When I discorvered that chocolate mousse is considered a low carb dessert, my mind was pretty much blown away. Chocolate Mousse is heaven. Kind of like this Chocolate Mousse Pretzel Crust pie that I made last year. You could eat just the filling of the pie by itself and forget about the pie crust. You could even make this mousse for your Valentine’s Day sweetie and not mess it up because it’s only 3 ingredients!
Ugh, speaking of Valentine’s Day… I decided this year, I’m going to buy myself some chocolate, flowers, and order a pizza that night, because the Walking Dead comes back on. Who needs a man to do all that stuff for you? I’m also going to take a picture of the chocolate and flowers and then post it on facebook and tell everyone they were from my secret admirer. Ba ha ha …Shh… don’t tell anyone.
Also, and to every one that is single out there like me, I hope that one day your crush or loved one will be with you. Life is too short so tell them how you feel. I told mine and it was too late.
- 2 13.5 ounce can of light coconut milk
- 2 tablespoons of cocoa powder
- 2 tablespoons of powdered sugar
- Place the 2 cans of coconut milk in the frdige for a couple of hours or overnight. Scoop out all the hard milk at the very top of the can. In a stand mixer with a wire mix, whip the coconut milk until light and fluffly and add in the cocoa powder and powdered sugar. Serve with fresh fruit or shaved chocolate.
