Spicy Chipotle Lentil Chili

Ingredients
  • 1 tablespoon olive oil
  • 1 red peppers, diced
  • 1 onion, diced
  • 2 cups red lentils
  • 6 cups water
  • 1 15 oz can of low sodium black beans
  • 1 15 oz can canned corn
  • 1 can (14oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp of cumin
  • 1 tsp garlic powder
Instructions
  1. In a large dutch oven heat olive oil and add onions and bell pepper. Cook until soft. Add the lentils, beans, corn, tomtatoes and spices. Then add water. Cook on high for 10 minutes and check to see if the lentils are cooked through. Cook longer if needed and enjoy. This makes like 10 servings.
