Let me introduce you to my favorite WW meal: Bubble Up Enchiladas. One serving of this is 6 points, for a very large portion. It is hard to not eat any more of it. There are also different variations of the “bubble up” casserole like pizza and chicken pot pie. The best biscuits to use for this is the Reduced Fat Flaky layer biscuits that Pillsbury has. I always buy cheese that says 2% on it now, because fat free cheese is just disgusting in my opinion. I tried melting fat free cheese on top of this casserole once and it looked like plastic. It wasn’t very appetizing to say the least. 😉
I’m working on a special project right now, because I want to get into the photography business. I am creating a photo website that will have some photos (of course) on it and a blog. My host that allows me to have this domain makes it possible for me to create add-on domains, since I’m paying for unlimited space. A month is only 6.95. I think that is a really sweet deal. I will keep you all posted on when I am finally done with it! In the mean time, I will leave you with this pretty picture that I am thinking about turning into a puzzle and giving it to my Grandma for Christmas this year. She loves puzzles.
Bubble Up Enchiladas Weight Watchers Recipes
1 pound ground turkey
1 (10 ounce) can enchilada sauce
1 (8 ounce) can tomato sauce
1 can reduced fat refrigerator biscuits
1 ¼ cups shredded low fat Mexican Cheese
Preheat oven to 350 degrees. Brown turkey and drain if needed. Mix in a can of enchilada sauce. Cut the refrigerated biscuits into fourths and stir them in the meat mixture. Then you just dump it all in a greased casserole and bake for 25 minutes. Take out of oven and sprinkle cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.
You can make this into 6 or 8 servings
