Who doesn’t love a good BLT sandwich? It has bacon, lettuce, and tomatoes in it. Speaking of which, I need to make one of those sandwiches soon.It’s been awhile. I have a couple friends who don’t like bacon, and I still wonder why I’m friends with them? J/K btw. 😉 This guacamole has every element in a BLT sandwich minus the lettuce. I don’t know why, but whenever I try to type in guacamole in this blog, I want to spell it as gaucamole instead. Don’t know why, but it’s just a habit and I want to spell it that way! Anyways…. The avocado probably subs out the lettuce since it is green. Then every good BLT sandwich has to have some spicy mayo sauce on it right? I used already prepared salsa instead of the tomatoes and cayenne pepper for the hot sauce. Everything else we had on hand.
This weekend I spent most of Saturday hibernating inside the house besides going to spin class early in the morning. The wind was just way to damn cold out there and today we finally got rid of a lot of junk we had downstairs in the basement. That junk aka clutter, had been sitting in a pile for almost half a year. It’s our pile where we like to throw everything we don’t use anymore, and we end up donating them. We loaded up the car today and got rid of it all. It almost makes me feel a lot better getting rid of all that clutter.
Oh yah, and thanks to everyone who has been visiting this blog lately. I’ve been having more visitors than usual and I hope it stays that way!
- 4 strips bacon, cooked crisp and crumbled
- 4 ripe, Fresh California Avocados, seeded and peeled
- 1 tsp.salt
- 2 tsp.hot sauce
- ¼ cup mayonnaise
- ½ lime, juice only
- 2 small tomatoes, seeded and chopped
- Place all ingredients except tomatoes in a medium bowl; mash and combine with a fork until the texture is semi-smooth.
- Stir in tomatoes.
