    Buffalo Chicken Empanadas

    Empanadas are usually deep-fried in a lot of fat and contain a ground beef filling mixture. My empanadas are air-fried and stuffed with creamy buffalo chicken for a super filling on-the-go lunch or snack! 

    If you love your Air Fryer and Instant Pot as much as I do, my content planned for the next 3 months includes quite a bit of those recipes. Today is a really simple recipe that is great to make for Lunch or Dinner. I make my buffalo chicken on the stovetop with just 4 ingredients that you can keep on hand at all times.  Then I use the 2 Ingredient Dough recipe for the empanada dough and cook these in my air fryer. They come out perfect every time and you can’t mess them up. 

    I’m almost done working on updating all the recipes on this site to include the new myWW points for all 3 plans. I just finished updating recipes from 2014 yesterday. 

    I still have 2013 to 2010 to do so hang tight. Serving sizes were also updated on a bunch of recipes to make it easier for you guys. My old blogger self wasn’t thinking straight when posting some of those recipes without the serving sizes. There are still a few recipes on this site that do not have smart points but those need to be reworked to make them more WW friendly. They will not have any points listed on them. 

    What Ingredients do I need for Air Fryer Empanadas?

    Chicken - any type of pre-cooked chicken works well rotisserie, canned, shredded 

    Cream Cheese  - I used Philadelphia whipped cream cheese to keep the points low 

    Frank’s Buffalo Wing Sauce - is my favorite wing sauce to use. ½ a cup of Frank’s is still pretty low in points 

    Greek Yogurt  and self rising flour to make the dough 


    Air Fryer Empandas

    How to make Air Fryer Empanadas

    In a medium skillet over medium heat, add 2 cans of chicken (drained) and cooked until warmed through. 2 to 3 minutes. Add the cream cheese, cheddar, and buffalo wing sauce. Stir until everything is well combined and melted. 1 to 2 minutes. Set aside. 

    Make the dough by combing the Greek Yogurt and self-rising flour in a bowl. Dump out the dough and any flour that didn’t stick to a work surface and form the dough into a ball shape with your hands. Cut the dough into two equal pieces. 


    Roll the dough out into a round circle and place half of the buffalo chicken mixture on one side of the dough. Fold the other side of the dough on top of the buffalo chicken and crimp the edges of the dough with a fork. 

    Place the empanada in your air fryer basket and spray the top with cooking spray. Set the timer to 10 minutes and the temperature to 350. Check to see if the dough is done at 10 minutes and if it is not done continue cooking for another 2 minutes. 

    Serve with some blue cheese sauce or ranch for dipping. 

    Oven Instructions: Place the empanadas on a sheet pan and bake them at 400 degrees for 20 to 25 minutes. 

    Number of Servings: Makes 2 empanadas

    Tips for Buffalo Chicken Empanadas

    Sometimes when I make these, I like to sprinkle a little bit of dry ranch seasoning powder on top of the dough or inside the buffalo chicken dip for flavor. 

    What to serve with empanadas? My favorite ranch dressing that I get in the store is Bolt House Farm’s Greek Yogurt Ranch dressing.

    Ingredients

    2 cans of chicken, drained 

    2 tablespoons of whipped cream cheese 

    2 tablespoons of Frank’s Buffalo Wing Sauce 

    1 oz of mild cheddar cheese 

    ½ cup of plain nonfat Greek Yogurt 

    '½ cup of self-rising flour


    Instructions
