Air fryer buffalo chicken empanadas are a delicious and easy-to-make appetizer or snack. The empanadas are filled with shredded chicken that has been tossed in buffalo sauce and mixed with cream cheese, cheddar cheese, and green onions.

Today is a really simple recipe that is great to make for Lunch or Dinner. I make my buffalo chicken on the stovetop with just 4 ingredients that you can keep on hand at all times. Then I use the 2 Ingredient Dough recipe for the empanada dough and cook these in my air fryer. They come out perfect every time and you can’t mess them up.Â
Sometimes when I make these, I like to sprinkle a little bit of dry ranch seasoning powder on top of the dough or inside the buffalo chicken dip for flavor.Â

What Ingredients do I need for Air Fryer Empanadas?Â
Chicken - any type of pre-cooked chicken works well rotisserie, canned, shredded
Cream Cheese - I used Philadelphia whipped cream cheese to keep the points low
Frank’s Buffalo Wing Sauce - is my favorite wing sauce to use. ½ a cup of Frank’s is still pretty low in points
Greek Yogurt and self rising flour to make the doughÂ

How to make Air Fryer Empanadas
In a medium skillet over medium heat, add 2 cans of chicken (drained) and cooked until warmed through. 2 to 3 minutes. Add the cream cheese, cheddar, and buffalo wing sauce. Stir until everything is well combined and melted. 1 to 2 minutes. Set aside.
Make the dough by combing the Greek Yogurt and self-rising flour in a bowl. Dump out the dough and any flour that didn’t stick to a work surface and form the dough into a ball shape with your hands. Cut the dough into two equal pieces.
Roll the dough out into a round circle and place half of the buffalo chicken mixture on one side of the dough. Fold the other side of the dough on top of the buffalo chicken and crimp the edges of the dough with a fork.
Place the empanada in your air fryer basket and spray the top with cooking spray. Set the timer to 10 minutes and the temperature to 350. Check to see if the dough is done at 10 minutes and if it is not done continue cooking for another 2 minutes.
Serve with some blue cheese sauce or ranch for dipping.
Oven Instructions: Place the empanadas on a sheet pan and bake them at 400 degrees for 20 to 25 minutes.

Best Air Fryer Tips
The air fryer is so great for cooking simple basic food like air fryer steak, air fryer hard-boiled eggs, and air fryer bacon. Cook up some air fryer chicken breasts for the week and use it chicken quesadillas.
Overcrowding: Do not overcrowd the basket. Place items in a single layer in the air fryer basket or some food will not cook properly or all the way through.
Use a spray oil such as Pam to get food extra crispy and to save on calories.
Use parchment paper on the bottom of your air fryer for easy clean up.Â
