Air Fryer Tofu Mango Bowls

My brother introduced me to this Mango Tofu bowl recipe. The original recipe is from Cookie and Kate’s Blog. I just figured out a simple and easy way to make it during the workweek with the following changes. I used the air fryer to cook the tofu and a packet of 90-second microwave-ready Jasmine rice from Target. The air fryer gets the tofu extra crispy and crunchy instead of baking it in the oven. 

You can make the salsa and peanut sauce while the tofu is cooking or even use store-bought peanut dressing. This whole vegetarian-friendly meal or meatless Monday meal can be ready in under 20 minutes. I’ve been trying to lower my cholesterol levels lately by eating more vegetarian meals and fiber. Some black beans and avocado would be a great addition to the meal. 

What Ingredients do I need? 

In this section, you can find substitutes or suggestions for certain ingredients. I also will try and list out what the ingredients' purpose is for. 

Tofu  - Organic Extra Firm Tofu 

Peanut Sauce - homemade or store-bought - I like the Good and Gather Thai Peanut Sauce from Target. If you are looking for a Peanut Sauce recipe check this one out on my blog called Chinese Peanut Sauce. 

Jasmine Rice - can be cooked fresh or to save time I used a 90 second ready Jasmine Rice packet from Target 

Fresh Produce - Mangos, Red Bell Pepper, sliced green onions, cilantro, lime, and thinly sliced cabbage 

Additional Toppings - diced avocado or black beans

Air Fryer - Ninja AG301 Foodi 5-in-1 Indoor Grill with Air Fry, Roast, Bake & Dehydrate, Black/Silver

Air Fryer Parchment Paper Liners 

Bowl - for mixing  - AmazonCommercial Mixing Bowls, 3 Piece Set, Lids Not Included

How to make Air Fryer Tofu Mango Bowls

Preheat air fryer to 350 degrees Fahrenheit. 

Drain the tofu. Place block of tofu between 2 pieces of paper towels and put some heavy weight on top of it. Let the tofu drain for 10 minutes to half an hour. 

When the tofu is done draining, slice the tofu into even 3rds. Stack them on top of each other and

Then dice them into even cubes. 

Place the tofu on a sheet of parchment paper and spread the pieces out evenly. Drizzle them with olive oil and soy sauce. 

Lift the parchment paper with tofu into the air fryer basket and air fry the tofu for 18 minutes at 350 degrees. 

While the tofu is cooking prepare the Mango salsa. Combine the diced mangos, chopped bell pepper, green onions, cilantro, lime juice, and cabbage into a Small/medium sized bowl. Season with salt and pepper to Taste. 

Cook the Jasmine rice in the microwave for 90 seconds. 

To assemble, combine the rice, crispy tofu, and salsa into a bowl. Top with peanut sauce and chopped peanuts.

Ingredients

  • 1 block (12 to 15 ounces) organic extra-firm tofu

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon reduced-sodium soy sauce

  • 2 packages of 90 second ready Jasmine Rice

  •  8 tablespoons Thai Peanut Sauce

Mango Salsa 

  • 2 large ripe mangos, diced

  • ½ medium red bell pepper, chopped

  • 4 thinly sliced green onions

  •  ¼ cup chopped fresh cilantro

  • 2 tablespoons lime juice

  •  Salt and pepper to taste 

  •  2 cups shredded purple or green cabbage


Instructions

  1. Preheat air fryer to 350 degrees Fahrenheit. 
  2. Drain the tofu. Place a block of tofu between 2 pieces of paper towels (on a plate or cutting board) and put some heavy weight on top of it. Let the tofu drain for 10 minutes to half an hour. 
  3. When the tofu is done draining, slice the tofu into even  slices. Stack the slices on top of each other and then dice them into even cubes. 
  4. Place the tofu on a sheet of parchment paper and spread the pieces out evenly. Drizzle them with olive oil and soy sauce. 
  5. Lift the parchment paper with tofu into the air fryer basket and air fry the tofu for 18 minutes at 350 degrees.
