    Alton Brown's Meatloaf

    I don't know what my problem is with cooking meat to the right temperature? We had a thermometer too and I was pulling it out to check what the temp was after 30 minutes. Not even close. I even googled to see what the temperature of the meat should be when the turkey was cooked through. One website said 165. Think that's a little bit too high. Alton's recipe said 155.

    Ingredients Needed

    • Garlic-flavored croutons -
    • Ground black pepper
    • Cayenne pepper -  is a type of chili pepper that is commonly used to add heat and flavor to dishes. It is named after the city of Cayenne in French Guiana and is often sold in powdered form.
    • Chili powder -  Is a blend of mixed red chilis that have been dried up and pulverized until it resembles powder. Sometimes other spices like cumin and paprika.
    • Dried thyme
    • Onion, roughly chopped,
    • Carrot, peeled and broken
    • Red bell pepper, roughly chopped
    • Cloves garlic - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar. 
    • Ground chuck - a type of beef that comes from the shoulder and neck region of the cow. It is a popular choice for making hamburgers due to its high fat content, which gives the burgers a juicy and flavorful taste.
    • Ground sirloin (I used extra lean ground turkey) is a lean cut of beef that comes from the back of the cow, near the sirloin and short loin.
    • Egg - The best type of eggs you can buy at the store are organic or free-range eggs, while others may prefer eggs from specific breeds of chickens
    • Catsup - use your favorite brand
    • Ground cumin -  is a member of the parsley family. It is a dried seed that is made from a plant called Cuminum cyminum.
    • Worcestershire sauce - Adds a savory, umami flavor to dressings. It is commonly used in Caesar salad dressing, as well as in dressings for steak salads and other meat-based salads.
    • Hot pepper sauce I like Franks or Chalulu
    • Honey - Always go for a raw honey and one that is unfiltered. Preferably locally sourced.

    Recipe Tip: The veggies just have to be chopped small enough to fit into the food processor.

    How to Make Meatloaf

    The great thing about this recipe is, that it's only 3 points per slice using extra lean turkey. I sliced it into 10 equal servings. You could have 2 slices for only 6 points too or make a turkey meatloaf sandwich.

    Step 1: In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl.

    Step 2: Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.

    Step 3: Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.

    Step 4: Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

    Step 5: (Optional) Make some french fries in the oven or air fryer to serve with the meatloaf.

    We had meatloaf and french fries.

    Servings: 10 (That's per loaf. This recipe makes 2, and I halved the recipe. )

    6 ounces garlic-flavored croutons

    ½ teaspoon ground black pepper

    ½ teaspoon cayenne pepper

    1 teaspoon chili powder

    1 teaspoon dried thyme

    ½ onion, roughly chopped

    1 carrot, peeled and broken

    3 whole cloves garlic

    ½ red bell pepper

    18 ounces ground chuck

    18 ounces ground sirloin (I used extra lean ground turkey)

    1 ½ teaspoon kosher salt

    1 egg

    For the glaze:

    ½ cup catsup

    1 teaspoon ground cumin

    Dash Worcestershire sauce

    Dash hot pepper sauce

    1 tablespoon honey


    Instructions

      Does anyone know of a super food to help you get taller? I searched all over the place and have found nothing, I am looking for something that works wonders, something like the metabolic recipes I used to lose the weight quickly at http://hopcube.net/metabolic-recipes-now.html, but just to get taller.       hi,

      Your turkey meat loaf tasted overdone because it is too lean/dry. Alton Brown uses ground beef with Fat in it and garlic croutons made with olive Oil for his meat loaf. Ground turkey is a super lean meat.

      There are plenty of good/healthy cooking oils. Your website is very well made and a pleasure to look at.
