This is almost exactly like the recipe my grandma uses to make her apple bars. Except that she uses an egg yolk instead of an egg white. We made these together today, since she is in town for awhile. I've been craving these bars for awhile now, and all of my family just love these bars. My aunt and uncle request that my grandma makes them, whenever we go down to Nebraska for a visit. The apples came from our apple tree in our back yard. 🙂 Next week, I'm going to pick all the rest of the apples off our tree and freeze them in freezer bags. Who needs an apple pie when you have these bars. The next time you go to the orchard to pick all those apples make these! You will not be disappointed.

Ingredients

2 ½ c. flour
1 c. butter
1 c. cornflakes
8-10 tart apples
1 egg white and enough milk to make ⅔ c.
¾ - 1 c. sugar
1 tsp. cinnamon
1 egg white

Instructions

Combine flour and salt. Cut butter into flour mixture. Add egg white to milk; mix well. Stir milk and egg mixture into flour mixture to make a dough. On a floured surface, roll half the dough to make a 11 x 17 inch triangle. Fit into and up the sides of a 10 ½ x 15 ½ x 1 inch baking pan. Sprinkle with corn flakes. Top with apples. Combine sugar and cinnamon; sprinkle on top. Roll remaining dough to 15 ½ x 10 ½ inch rectangle and place over apples. Seal edges. Cut slits in the top. Beat egg whites until frothy and brush this on the top. Bake in 375 degree oven for 50 minutes. Makes 3 dozen.
ICING FOR DANISH APPLE BARS:
1 c. sifted powdered sugar
3-4 tsp. milk
Mix and drizzle over warm bars

I slice them up and let them soak in some lemon water for a bit. Then drain the apples and store them in freezer bags. Let out as much air as possible! I need to update this post it's kind of old. 🙂
