Apple Cheesecake Parfaits

Boy have I got a Fall treat for you! This parfait has layers of nilla wafers, cheesecake, and sweet pumpkin spice cinnamon apples. You will want to eat this on a cold Fall night.

Cheesecakes are loaded with fat but instead of using cream cheese use nonfat Greek yogurt instead. Greek yogurt is a great substitute for cream cheese because it’s high in protein and 0 smart points. I added in some sugar-free instant cheesecake pudding to still mimic the cheesecake flavor. What a treat. Top that off with some warm sugary pumpkin spice apples and some sugar-free caramel sauce. Total yum!

Here’s a little tip for you if you want lower point dishes. When you see cream cheese listed in the recipe try replacing it with nonfat Greek yogurt instead.

Ingredients

1 cup of Greek Yogurt

1 1oz package of Sugar-Free Cheesecake Pudding Mix (only use 1/2 of the package)

2 apples diced

1 tsp of cinnamon or pumpkin pie spice

2 tsp of brown sugar

4 Nilla wafers – Crushed

Cooking Spray

Optional Toppings 

Sugar-Free Caramel Sauce

Nonfat Dairy Free Reddi Wip

Instructions

In a small bowl mix the Greek yogurt and instant pudding mix together until well combined. It will be thick. You can add this to a gallon freezer bag and cut a hole in the bottom to pipe the cheesecake in or just use a spoon.

Crush the vanilla wafers with a rolling pin.

Spray a small nonstick skillet with cooking spray and add the apples, cinnamon, and brown sugar. Cook on medium-low heat until the apples are soft and tender. 5 minutes.

Divide the crushed Nilla wafers between 2 cups. Add the cheesecake and top with apples.
