Avocado  and Egg Toast

Breakfast can be super healthy with this avocado and egg toast! I serve mine with whole grain bread and some fruit to make sure I'm getting some great nutrients.

I've been trying to master frying eggs in a nonstick skillet because I'm currently getting sick of scrambled eggs. Fried eggs take a little bit longer to cook than scrambled eggs do. I watched a couple of youtube videos on how to make the best fried eggs and they all required a couple of tablespoons of butter. Butter is kind of unhealthy as we all know so I use cooking spray instead.

First you want to spray a non stick skillet with some cooking spray on medium high heat. If you cook this on high heat the cooking oil will start to turn a dark brown color on the skillet and then your eggs will look like crap. Do not do this, because I've done it a couple of times by mistake. Crack an egg in the pan and wait for the outer white yolks to cook through. Once the outer white yolk is cooked add a little bit of water to the pan. This creates steam and cover the pan with a lid. I prefer a see through lid because you can see if the egg is done cooking. You will have a perfectly cooked fried egg.

How to Make Avocado Egg Toast

Heat a nonstick skillet to medium heat. Spray with cooking spray. 

Crack the egg into the skillet and cook until eggs are white on the bottom and the yolk is runny for 3 to 5 minutes. You can place a cover on top of the pan (optional) while the egg is cooking. Clear covers allow you to see the egg cooking. This will help create more steam to cook the egg faster.

Meanwhile, toast bread slices to desired doneness, 3 to 5 minutes

Mash avocado in a bowl; stir in salt, pepper, and red pepper flakes.  

Spread avocado mixture onto toast. Top with fried egg and season with sea salt and pepper.

Ingredients for Avocado Egg Toast 

Avocado - The ultimate best way to figure out points for avocado is to weigh them by the ounce on a scale. This way you can control the amount you have or else one whole avocado can be a lot of points. 

Bread  -   Find a low point bread using the scanner app tool. Brands will vary depending on what area you live in. I like Ezekiel Food For Life Sprouted Grain Bread (1 slice is 2 points).

Egg -  I always use large eggs. 

Salt and Pepper  - to taste 

Red Pepper Flakes  - for spice

  • 1 ounce of avocado
  • 1 slice of Whole Wheat 12 Grain Bread such as Ezekiel
  • 1 large egg
  • salt and pepper
  • red pepper flakes

Instructions

  1. Heat a nonstick skillet to medium heat. Spray with cooking spray. 
  2. Crack the egg into the skillet and cook until egg whites are white and the yolk is still runny, 3 to 5 minutes. 
  3. Meanwhile, toast bread slices to desired doneness. 
  4. Mash avocado in a bowl; stir in salt, pepper, and red pepper flakes. 
  5. Spread avocado mixture onto toast. Top with fried egg and season with sea salt and pepper.
