Breakfast can be super healthy with this avocado and egg toast! I serve mine with whole grain bread and some fruit to make sure I’m getting some great nutrients.
I’ve been trying to master frying eggs in a non stick skillet because I’m currently getting sick of scrambled eggs. Fried eggs take a little bit longer to cook than scrambled eggs do. I watched a couple of youtube videos on how to make the best fried eggs and they all required a couple of tablespoons of butter. Butter is kind of unhealthy as we all know so I use cooking spray instead.
First you want to spray a non stick skillet with some cooking spray on medium high heat. If you cook this on high heat the cooking oil will start to turn a dark brown color on the skillet and then your eggs will look like crap. Do not do this, because I’ve done it a couple of times by mistake. Crack an egg in the pan and wait for the outer white yolks to cook through. Once the outer white yolk is cooked add a little bit of water to the pan. This creates steam and cover the pan with a lid. I prefer a see through lid because you can see if the egg is done cooking. You will have a perfectly cooked fried egg.
If you have an air fryer you can use that to toast your bread or use a toaster. I don’t own a toater anymore because the air fryer can do the same thing a toaster does.
Spread some avocado on that toast and top it with that perfect fried egg and serve with some fruit. What a super and healthy breakfast!

Ingredients
- 1 ounce of avocado
- 1 slice of Whole Wheat 12 Grain Bread such as Ezekiel
- 1 large egg
- salt and pepper
- red pepper flakes
Instructions
- Put the bread in the toaster or toast the bread in a skillet until brown.
- While the bread is toasting cook the eggs however you like them. Follow my method for making a fried egg above.
- Mash the avocado with a fork in a small bowl.
- Spread the avocado over the toast and sprinkle on a dash of red pepper flakes, depending on however spicy you like it. Top with the eggs.
