Bacon and Egg Breakfast Tacos

Breakfast Tacos

Breakfast Tacos are ready in less than 20 minutes with the help of some store-bought ingredients. They include a warm soft tortilla, scrambled eggs, bacon, and some crispy air fried potato crispy crowns. If you’ve ever had Potato Ole’s from Taco John’s these are pretty similar, and are not deep fried in a ton of fat. 

I’m a semi-homemade cook and love to utilize store ingredients like fully cooked bacon and my favorite cheese sauce to help with these breakfast tacos. You can eat them for breakfast, lunch, or dinner! 

Ingredients for Breakfast Tacos

There are lots of reasons to cook your bacon in the oven!

Eggs: Scrambled is best  

Bacon: Black Label Hormel Bacon - Fully Cooked - just needs to be reheated in the microwave for 30 seconds or until it gets crispy. 

Cheese Sauce: Tostitos Medium Con Queso Cheese Sauce 

Potatoes: Any frozen potato will work for these, shredded hashbrowns (cooked in a skillet) or some Ore Ida Crispy Crowns. Cook these in your air fryer for 12 minutes at 350. Season them with your favorite all purpose seasoning. 

Tortillas:  I like to use the Pueblo Linda brand from Aldi corn tortillas and reheat them up in my microwave for 30 seconds. Points for breakfast tacos will vary depending on what tortilla you use. 

Toppings (optional) 

Green Onions 

Diced Avocados 

Fat-Free Salsa 

How to make Breakfast Tacos 

Preheat oven to Air Fryer to 350. Place the frozen potato rounds in the basket and air fry for 12 minutes.  

While the potatoes are cooking make the scrambled eggs. Heat a nonstick skillet to medium-high heat. Spray the pan with cooking spray. Whisk together 2 eggs in a small dish and add them to the skillet until they are cooked through. Set aside on a plate or small dish. 

Place two strips of bacon between a paper towel sheet and add them to the microwave for 30 seconds. 

Arrange the tacos. Add eggs, 1 tablespoon of cheese sauce, 1 strip of bacon on top of a tortilla. Enjoy!

Ingredients

  • 2 eggs, scrambled
  • 2 strips of bacon, fully cooked 
  • 2 tablespoons of Tostitos Medium Con Queso Cheese Sauce 
  • 6 frozen crispy crown potatoes, fully cooked 
  • 2 tortillas

Instructions

For fewer points leave out the potatoes!
