Banana's Foster French Toast

Ingredients

8 slices cinnamon bread, cut into 1/2-inch cubes (about 8 cups)
8 eggs
1 cup milk
2 1/2 cups real maple syrup
1 teaspoon rum extract
6 ripe bananas, cut into 1/2-inch slices
1 cup chopped pecans


Instructions

French toast is so good, and even better when you have some bread to get rid of. I found this recipe on Pillsbury website and saw that for one serving it was 620 calories and 17 grams of fat! I tried altering the recipe to make it healthier. I used 4 large eggs and 4 egg whites, 1 whole wheat french bread loaf, and 1 cup of 1% milk. I also cut back a little on the amount of syrup that was supposed to be in there. According to fatsecret.com (my new favorite website) it came to 190 calories, and 3.1 grams of fat! This is without the pecans added in. With the pecans I'm guessing it would be about 250 calories more?? The bananas added a really nice touch to this. I will make this one again for sure.

We still have some ham left from Easter Sunday and I haven't made that quiche that I was talking about before in a previous post. Man, does ham get old pretty fast. Guess what we are having for dinner tomorrow night? 😉
