Instant Pot Bourbon Chicken

One of my favorite things to get at the Asian restaurants in the mall is Orange Chicken. The Bourbon chicken is good too and it kind of reminds me of Orange chicken in away.  The bourbon chicken in those places are always deep-fried and twice the calories. This recipe has half the fat and calories in it and the whole recipe comes together in no time.

Ingredients: 

Here’s a list of what you will need to make this recipe. Always check your fridge or pantry to make sure you have something first! 

Chicken: can use thighs (boneless) or boneless skinless chicken breasts 

Soy Sauce – I always use low sodium soy sauce. Coconut Aminos or teriyaki sauce can be substituted for soy sauce. 

Bourbon  The alcohol is cooked off while the chicken is simmering in the Instant Pot. Apple juice can be subbed for the alcohol in this recipe if you do not wish to use Bourbon. 

Honey and Sugar – for added sweetness 

Garlic Powder and Ginger  can use fresh ginger or garlic 

Cornstarch and Water – When these two items are whisked together they are called a slurry and will help thicken the sauce. If this is not enough try adding more cornstarch to help the sauce thicken. 

Toppings (optional) 

Green Onions or sesame seeds 

Instant Pot Bourbon Chicken

How to make Bourbon Chicken 

First, place the chicken breasts in the bottom of your Instant Pot. 

In a small bowl combine the soy sauce, bourbon, honey, dijon mustard, sugar, garlic powder, and ginger. Whisk well to combine. Pour over chicken. 

Close and lock the lid on your Instant Pot. Set the Instant Pot to manual and set the timer for 20 minutes. When the time is up do a quick release. 

The sauce should be boiling when you open the lid. Mix the water and cornstarch together in a small bowl and add to the sauce. Whisk everything together until it has slightly thickened. 

Serve with white or brown rice and garnish with chopped scallions (optional).

Ingredients

  • 1 lb boneless skinless chicken, cut into bite-size pieces

  • 1/2 cup low sodium soy sauce

  • 1/2 cup bourbon

  • 2 Tablespoons honey

  • 1 teaspoon dijon mustard

  • 1/2 cup brown sugar

  • 1 teaspoon garlic powder

  • 1/8 teaspoon ground ginger

  • 1 Tablespoon corn starch

  • 1 Tablespoon water


Instructions

  1. Place chicken breasts in the bottom of your Instant Pot. 
  2. In a small bowl combine the soy sauce, bourbon, honey, dijon mustard, sugar, garlic powder, and ginger. Whisk well to combine. Pour over chicken. 
  3. Close and lock the lid on your Instant Pot. Set the Instant Pot to manual and set the timer for 20 minutes. When the time is up do a quick release.
