Cookies for breakfast?! I know that’s what you’re thinking right now but here me out. These cookies have oats and peanut butter in them, then you can add whatever ingredients you like. Dried fruit and chocolate chips will add more points but fresh fruit will keep the cookies at the same number.
Oatmeal has never really been a favorite of mine to eat for breakfast because it doesn’t fill me up much. I’ve tried overnight oats and didn’t like them cold but this breakfast cookie is pretty much how I eat my oatmeal these days. Plus, it almost could be like a monster cookie if you add in m&m’s like I did. 🙂
Grocery List
Here is the basic rundown of what is needed for this dish. I’ve also included substitutes that can be used if you do not have any of these items.
Oats - Any kind of oats is fine.
Peanut Butter- Do not skip this! Franks is the best.
Baking Powder - Make sure you measure this because if you use too much baking powder the cookie will be very bitter. Trust, me I’ve done this before.
Milk - I used unsweetened almond milk. It helps keep the points low any other milk like 1 or 2 percent will add more points.
Sugar - Sugar substitutes are fine to use I always like to add that so people know they don’t need to use real sugar. I can’t eat sugar substitutes because they mess with my digestion.
Add-ins for breakfast cookies - Dried fruit or chocolate chips are going to add more points. Chopped apples, mashed banana, or cranberries would be really good in these!
How to make Breakfast Cookies
Preheat oven to 350 degrees F. Using a food scale, measure out 1 cup of oats in a mug or small bowl. Then add in the rest of the ingredients and stir to combine.
Spoon out the cookie dough onto a lined sheet pan with parchment paper and spread it out into a large cookie.
Bake for 10-15 minutes. Enjoy!
