It’s National Candy Corn day on October 30th, did you know that? Candy corn is everybody’s favorite candy right? I guess it depends on the person because I’ve seen a lot of facebook pages ask whether or not they like candy corn lately. Some hate it, others love. It’s kind of like cilantro. You either hate it or love it. At least candy corn doesn’t taste like dish soap.

I had to stop myself after eating one slice of this pizza! It was so good with some ice cream on top. Do you know why I make healthy dinners  for this website every now and then? So I can indulge in desserts like this from time to time. 🙂

I happen to like candy corn. I didn’t really like it when I was growing up and would get disappointed whenever there was a house that was giving away candy corn for trick-or-treating. C’mon, can’t you give away something better, like a Snicker’s or Milky Way Candy bar? My favorite candy that has the taste of candy corns are the white chocolate M&M’s. YUM. I wouldn’t mind getting some of those in my Halloween bag. Oh……how I wish I could still go trick-or-treating again. Adults should be able to, but they can just buy their own candy whenever they want to at the grocery store.

I took the cookie pizza that I had made  and altered that a bit. I added in some canned pumpkin, candy corns, and a bag of Halloween chips . Hello Candy Corn Cookie Pizza! A big scoop of ice cream would take this pizza over the top.

Ingredients

  • 16 tablespoons butter
  • 1 cup granulated sugar
  • 1/4 cup canned pumpkin
  • ½ cup packed brown sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 2¾ cup flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups of candy corn
  • 1 cup of Halloween Chocolate Chips

Instructions

  1. Preheat oven to 350
  2. In the bowl of a stand mixer beat together the sugar and butter. Next add in the canned pumpkin. Add the eggs one at a time until well combined and then the vanilla. Add in flour, baking soda, salt, candy corn, and chocolate chips.
  3. Spread the cookie dough mixture in a cast iron skillet and let the cookie bake for 28 minutes. Let the cookie cool, until ready to serve.
