Caprese Orzo Pasta

Caprese pasta salad consists of 5 simple ingredients that include pasta, fresh basil, cherry tomatoes, fresh mozzarella cheese, and to dress it all up I used some Italian dressing to the salad. 

Caprese Pasta Salad

Bocconcini Mozzarella 

Fresh mozzarella is so good if you can find it at your local grocery store to make this Caprese pasta.  The fresh cheese comes in different shapes and these little tiny balls are so cute and perfect for pasta salads. Caprese is basil, fresh mozzarella, and tomatoes. Can’t get any better than that. You can choose your own pasta. 

Making Homemade Fresh Mozzarella 

I once tried making my own fresh mozzarella and went all over town looking for ingredients to make cheese. I couldn’t find anything (only milk) and it is just best to order that stuff online like Amazon.  To make fresh mozzarella, you need rennet and citric acid. 

The first time I made it, I got the curds to form, but shaping the cheese was the hard part. The end result was a lump of cheese that looked like a white human brain. Ha ha! It was not pretty looking like the store-bought stuff but it still tasted like cheese. You can go one step further for this salad and make your own mozzarella, but heck buying it in the stores is just as easy.  I think I prefer that better than making it. I’m not going to give up on that though. 

Ingredients: 

Radiator pasta or any shaped pasta will work for this. I had originally made this recipe with orzo pasta. 

Cherry tomatoes - I really like the brand of tomatoes called Flavor Bombs. If you’re curious to find out more do a quick google search for Flavor Bomb cherry tomatoes. They are the best if you can find them! 

Basil, thinly sliced - fresh is always best  

Mozzarella balls - look for Bocconcini balls that haven’t been added to any oil 

Italian Dressing 

salt & pepper to taste

How to Caprese Pasta Salad  

  1. In a medium pot of salted boiling water, cook pasta according to package directions until al dente. Drain and set aside.
  2. In another medium bowl add pasta, sliced cherry tomatoes, thinly sliced basil, mozzarella balls, and Italian dressing. Garnish with more fresh basil and serve.
  3. Serving size 1 cup.

Ingredients

1 cup of orzo or radiator pasta or orzo pasta 

1 cup cherry tomatoes,  sliced in half 

2 tablespoons of basil, thinly sliced 

½ cup of bocconcini mozzarella balls 

¼ cup of Italian Dressing 

salt & pepper to taste
