Caramel Apple Cheese Cake Bars

Layers of cookie crust, cheesecake, cinnamon flavored apples, and streusel come together in this bar that is great for Fall! Out of all the bar recipes that I have on my blog, this one is definitely my favorite!

Caramel Apple Cheesecake Bars

If you want to bring something elegant and delicious to your Thanksgiving dinner/meal that isn’t pumpkin or apple pie try these caramel apple bars. All the layers combined together with the caramel, streusel, apples, and cheesecake will make you be handing out the recipe. Everyone will want it! 

This recipe requires a lot of bowls because of all the different layers. I used at least 4 so be prepared for all the dishes. 

Serving Sizes 

This bar recipe can be easily halved, doubled or tripled. Since it is just myself living alone I will always half the recipe. Yields 12 bars total.  

Caramel Apple Cheesecake Bars

How to Make Caramel Apple Bars

Preheat oven to 350 degrees F.

In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until the mixture is crumbly. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.

In a large bowl, beat cream cheese with ¾ cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.

In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Serve cold and enjoy!

Tips for Caramel Apple Cheesecake Bars  

If you are in a hurry and don’t have time to wait for the butter and cream cheese to come to room temperature you can pop them both (not at the same time) in the microwave for a couple of seconds. I wouldn’t go any longer than 20 seconds or else you will have melted butter or cream cheese. 

Any type of apples can be used for this. I have used Granny Smith and Honey Crisp. 

Sugar substitutes can be used in place of regular sugar. Just be sure to check out what the conversions are for whatever one you plan on using. 

How to freeze caramel apple bars? Wrap up each bar individually in plastic wrap if you plan on storing them in the freezer. They will last up to 3 months. Do not freeze the bars with the caramel sauce on top. 

What to serve with caramel apple bars?  I would serve some vanilla or pumpkin spice ice cream on top of these apple bars as a dessert of course. 🙂

Ingredients

Crust: 

1 cups all-purpose flour

¼ cup firmly packed brown sugar

½  cup (1 sticks) butter, softened

Cheesecake Filling:

1.5 (8-ounce) packages cream cheese, softened

¼ cup sugar, plus 2 tablespoons, divided

1 large eggs

½ teaspoons vanilla extract

Apples:

3 Granny Smith apples, peeled, cored and finely chopped

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg


Streusel Topping: 

½  cup firmly packed brown sugar

½ cup all-purpose flour

¼ cup quick cooking oats

¼ cup butter, softened

¼ cup caramel sauce (for topping, optional) 


Instructions

In a small bowl, combine all ingredients. I like to really combine it by using my clean hands to thoroughly combine the butter into the mixture.

Sprinkle evenly with Streusel topping. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Serve cold and enjoy!
