I really do apologize about this post. I've been doing really well trying to post healthy recipes but I just had to make these. Regular rice krispy treats are ok, but have you ever had the ones with caramel in the middle? My brother's wife really likes rice krispy treats and I had told her about this recipe. She said that I must bring them this weekend, so that is what I did. It was a crazy weekend and super busy!
My family went to Star Wars this weekend! I remember when I was little and there was a blizzard out. If we got snowed in that day, my family would sit around and have a Star Wars marathon. I am a fan of the first ever Star Wars movies that came out. The ones with Yoda and Darth Vader. The other Star Wars movies they tried to make after that just sucked. Annakin and Padme scenes were terrible and Jar Jar Binks has got to be the most annoying Star Wars character ever. The female lead role Rey, was just a bad ass chick and I loved her and BB8. I'm still mind boggled at the very ending of the movie. I'm still thinking about the movie the next day and I already want to go and see it again. Without John Williams music playing the background of that movie, it wouldn't be Star Wars!
P.S. The nutrition info is on the recipe so you can tell how many calories are in one bar. I wouldn't recommend these if you're tracking points on Weight Watchers. Well, maybe if you had some weekly's left. 🙂

Caramel Rice Crispy Treats and Star Wars
Ingredients
- Layer One
- 1⁄4 cup margarine or 1⁄4 cup butter
- 4 cups mini marshmallows
- 4 cups Rice Krispies
- Layer Two
- 1 (14 ounce) package caramels
- 3⁄4 cup margarine or 3⁄4 cup butter
- 1 (14 ounce) can sweetened condensed milk
- Layer Three
- 1⁄4 cup margarine or 1⁄4 cup butter
- 4 cups mini marshmallows
- 4 cups Rice Krispies
- 4 ounces shredded coconut (optional)
Instructions
- Layer One: Melt the margarine and marshmallows.
- Stir in Rice Krispies cereal.
- Pat in a buttered 9 x 13 baking pan.
- Layer Two: Melt the caramels, margarine and milk and bring to a boil.
- Pour over layer one.
- Refrigerate 35-40 minutes, until set.
- Layer Three: Melt margarine and marshmallows.
- Add Rice Krispies cereal (and coconut).
- Pat on top of cooled caramel layer two.
- *May add melted chocolate or caramel chips, if desired.
