Oh yes, and for all the food police out there the pink in the picture is not the chicken. It's ham. 🙂

Ingredients Needed
- Rigatoni or other similar shaped pasta
- Cubed chicken breasts - They’re lean and quick-cooking and always come out juicy and tender. Use an instant-read thermometer to make sure that the chicken is not over cooked. When reading labels for chicken breasts try to find ones that say Organic or Free Range.Â
- Ultra Thin Swiss cheese Slices (Sargento)Â - I like to use Reduced-Fat Cheese because it has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture
- Reduced-fat cream of chicken soup - Using cream of chicken soup, sour cream, and milk are pretty traditional ingredients found in casseroles. This help combine andÂ
- Low fat milk - Dairy does not like me at all so I go for a lactose free milk such as Fairlife. It also has more protein in it.
- Light sour cream - can also sub Greek yogurt
- Unsalted butter is the most commonly used type of butter in baking, as it allows for more control over the amount of salt in the recipe.
- Panko bread crumbs - are a type of breadcrumb commonly used in Japanese cuisine. Panko bread crumbs can be found in most grocery stores and are often used as a substitute for traditional breadcrumbs in recipes.
- Grated Parmesan cheese - Parmesan cheese is a hard, granular cheese that originated in Italy. It is typically made from cow's milk and has a sharp, nutty flavor.
- Chicken - A rotisserie chicken or any type of precooked chicken will work for this. If you use raw chicken you will need to cook the casserole longer than what the recipe states below.Â
- Ham  - Cooked lean ham such as 98% fat-free to keep this casserole low in points. This can be from a deli or a cooked ham that was already made.
- Swiss Cheese -Â Other cheese can be subbed but swiss is the main and traditional cheese often used in the dish chicken cordon bleu.

How to make Chicken Cordon Bleu
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
Bring a large pot of lightly salted water to a boil. Cook noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes.Â
While noodles are boiling, cook the chicken in a skillet with some butter 3 to 5 minutes per side. Set aside. The chicken doesn’t have to be cooked all the way through cause it will finish cooking in the casserole dish.Â
Drain and transfer noodles to the prepared casserole dish; top with chicken, ham, and Swiss cheese.
Mix cream of chicken soup, milk, and sour cream together in a bowl; spoon soup mixture over noodle mixture.
Melt butter in a skillet over medium heat; cook and stir bread crumbs and Parmesan cheese in the melted butter until crumbs are coated with butter and cheese, 2 to 3 minutes. Sprinkle bread crumb mixture over casserole
Bake in the preheated oven until the casserole is bubbling and lightly browned, about 30 minutes. Allow casserole to cool for 10 minutes before serving.
