I probably make it to Trader Joe’s at least 3 times a year and stock up on my Mandarin Orange Chicken, Roasted Garlic Marinara Sauce, and Olive oil when I go to Minneapolis. (wish one of those stores would come to Fargo) I happened to find this packet of chia seeds at Trader Joe’s this time, and picked one up since I’ve been wanting to try chia seed pudding. Chia seeds are these little black tiny seeds that expand over time once you put them in liquid or yogurt. You can use whatever flavorings you like for this pudding and I used chocolate. Thought it could have used a bit more sweetener to it but otherwise I really liked the texture, it was something different.
You can make chocolate chia seeds, raspberry chia seeds, vanilla chia seeds, orange chia seeds, cranberry chia seeds, white chocolate chia seeds, oreo chia seeds, banana chia seeds, the list goes on and on. 🙂
This weekend I went to Minneapolis to visit my family there. Every time I go there, I have to try a new place that has been featured on the show Diner’s Drive Ins and Dives. We went to Psycho Suzie’s Motor Lounge. It’s this cool place with a tiki vibe to it. The drink names on the menu were cute, I had the Psycho Zombie which had lime, coke, and rum in it and it was frozen so it had the texture of a slurpee. They make you put a deposit down for your drinks because they come in cute mugs like this. People end up taking the mugs home with them sometimes cause they’re just so cute.
We had cheese curds and Hawaiian barbeque pizza. I liked the barbeque sauce on the pizza, it was spicy.

1 1/4 cup unsweetened non-dairy milk (almond or coconut are my personal favs) 1/4 cup chia seeds 3 tablespoons raw cacao powder (baking cocoa will also work) Dash of pink Himalayan sea salt 1 tablespoon organic maple syrup or raw honey
Add all of the ingredients to a large glass jar with a lid, give it a quick stir, then put the lid on. Shake it like crazy to mix it all up. Refrigerate until very thick and pudding-like, at least 4 hours or overnight, shaking or stirring occasionally. Serve the pudding chilled with whatever topping you’d like.
