Chocolate, chocolate, chocolate, is that enough chocolate for you? Tis the week for chocolate! These cookies are made with cocoa powder, white chocolate chips, and semi-sweet chocolate chips. That’s 3 types of chocolate packed all in one cookie. I almost dislike this time of year for that very reason! All the food channels show non stop shows about chocolate and I think they do that on purpose. To make you want it even more. Darn, this Holiday! This recipe is from a Food Network star and I’ve made plenty of her recipes on this blog before. It’s not Ina Garten or Jeffery Z, or Duff.
As you may know already, I am a Food Network and Cooking Channel junkie. It’s a toss up between those two channels on the weekends, because I’m always flipping back and forth between the two. The only time the Cooking Channel isn’t on is when Ben is watching Big Bang Theory or I’m watching Reign and Vampire Diaries on Thursday night. Sunday nights is the Walking Dead. I’ll miss Worst Cooks in America for that show. The only show I can’t stand on Food Network is Mystery Diner’s. It’s kind of sad when you’re a restaurant owner and you have to hire someone to find out what is going on in your restaurant, but some of things that happen on that show are kind of ridiculous. - 2–1/2 sticks Butter, Softened
- 2 cups Sugar
- 2 whole Eggs
- 3 teaspoons Vanilla Extract
- 2 cups Flour
- 3/4 cups Cocoa Powder
- 1–1/2 teaspoon Baking Soda
- 1 teaspoon Salt
- 1–1/2 cup Good Quality Semi-sweet Chocolate Chips
- 2 cups Good Quality White Chocolate Chips
- Preheat oven to 350°F.
- Using a mixer, cream butter and sugar until fluffy, scraping the sides once.
- Add eggs one at a time, mixing after each addition. Mix in vanilla.
- Sift together dry ingredients, then add in batches to the mixer, mixing until just combined after each addition.
- Gently blend in chocolate chips and white chocolate chips.
- Using a cookie scoop, add 1 tablespoon portions to baking sheet. Dot the top of each cookie with 3 white chocolate chips if you’d like them to really show up on top. Bake for 9 to 11 minutes or until cookies are barely done but still soft and chewy.
- Let cool on a baking rack. Yummy!
