This chocolate cookie isn’t your average chocolate chip cookie. It has a chocolate base and gets topped with crushed peppermint candy canes. Peppermint candy is available all year long so don’t wait until Christmas to make it. 😉 Peppermint is an ingredient mainly used around the Holidays and people prefer to make this around that time of year. If you don’t like crushed-up candy canes because they can easily get stuck in your teeth, use chopped-up Andes mints.

You don’t have to make these cookies all at once. Roll the dough up into a log and freeze it for later use! When ready to bake let the cookie dough come to room temperature again.
What Ingredients do I need?

Butter - Unsalted butter at room temperature
White Sugar and Brown Sugar - There are 2 types of sugar in this recipe. Brown sugar gives the cookie it’s flavor. White sugar helps the cookies spread out more.
Egg - 1 large egg, at room temperature
Vanilla and Peppermint Extract - For flavoring, always use real extract and not imitation flavored extracts.
All-Purpose Flour, Cocoa Powder, baking powder - Always measure your dry ingredients exact.
Semi-Sweet Chocolate Chips - If you prefer a sweeter chocolate use chocolate chips. White chocolate chips will make the cookies look even fancier for the Holidays
Crushed Peppermint Candies - Any type of Peppermint candy will work with these cookies. I like Andes mints as well.
How to make Chocolate Peppermint Cookies

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together butter, white sugar, and brown sugar until light and fluffy. Beat in egg, then stir in vanilla and peppermint extracts. Combine flour, cocoa powder, baking soda, and salt; gradually stir into the creamed mixture. Mix in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets. Garnish the cookies with crushed peppermint candy.
- Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on cookie sheets for 5 minutes before transferring to a wire rack to cool completely.
