Happy Labor day to everyone and Meatless Monday!

I love trying out different foods,  so what have I been trying lately? Mostly different Vegan recipes. I'm on Youtube a lot and I'm subscribed to quite a few Vegan channels. The Vegan channels I subscribe to are High Carb Hannah, Liv B, and this channel called Hot for Food. Hot for Food is where I found this recipe for "fakin bacon." Whenever I'm on a healthy food kick, I'll switch to eating Vegan foods because I know that I'm getting healthy nutrients inside my body and eating plant based food is just over all great for your body.

This fakin bacon tasted a lot like real bacon bits to me and liquid smoke gave it a real nice bacon flavor without all the extra fat and cholesterol. Super healthy and you can sprinkle it on just about it anything. I'm thinking about making some maple "bacon" doughnuts and using this fakin bacon on top of them.

Ingredients

  • 3 Cups flaked unsweetened coconut
  • ¼ C gluten-free tamari (can sub soy sauce)
  • 1 tbsp liquid smoke
  • 2 tbsp maple syrup
  • 1 tsp smoked paprika
  • sea salt to taste

Instructions

  1. Preheat the oven to 325 F. In a mixing bowl whisk tamari, liquid smoke, maple syrup, and smoked paprika together. You can adjust any of the measurements to make it smokier, saltier, or sweeter. It might just be a matter of preference for some people.
  2. Then add the flaked coconut into the mixture and lightly toss with a spoon to coat evenly.
  3. Spread out evenly onto a baking sheet (or 2) heavily greased with coconut oil. Bake for 20 mins but toss the mixture on the sheet every 5 mins. Make sure you set the timer so you don't forget and burn the whole batch (which we may have done before!)
  4. Sprinkle with sea salt right out of the oven and remove the coconut fakin' bacon from the baking sheet, which is so hot it will continue to brown. Dump it onto a large plate or another baking sheet to cool.
