Easy Clam Chowder Recipe

Ingredients

  • 2 6.5oz cans minced clams
  • ½ cup minced onion 
  • 1/2 cup diced celery 
  • 1  cups cubed potatoes
  • 1/2 cup diced carrots 
  • 2 tablespoons butter 
  • 1/8th cup flour 
  • 2 cups of milk, 1 or 2
  • Black pepper and salt to taste

Instructions

  1. Melt the butter in a stockpot or Dutch oven over medium heat. Add the onions, celery, and carrots and continue cooking for 3 to 5 minutes or until the onions are translucent. 
  2. Sprinkle the flour over the vegetables and stir until lightly browned 1 minute. Pour in 2 cups of water. Add the potatoes a long with the canned clams and juices.  Bring to a low simmer and cook the potatoes until tender. 15 minutes. 
  3. Stir in milk until heated through. Season with salt and pepper to taste. 
  4. Garnish with chopped bacon, cheese, scallions, or chives if desired.
