Eclair Cake

Eclair Cake

A simple and easy no-bake dessert cake that tastes just like an eclair. An eclair is a long pastry made with choux dough and filled with vanilla pudding. It gets topped with a chocolate frosting. One of my favorite donuts is similar to an eclair cake and has a vanilla pudding center and has chocolate frosting on top. 

Flavor Combos 

This cake is super easy to change the flavors up. Check your stores to see what other flavors of instant pudding packets there are. Remember Sugar-free instant pudding packets come in 1 oz containers and regular instant pudding comes in 3.4 oz. Both use the same amount of milk required on the package to prepare them. 

Use chocolate graham crackers instead of honey. 

For the frosting, I’ve seen similar recipes that call for a container of chocolate frosting. Melt in in the microwave for 15 seconds or until you can easily stir it and pour over the cake if you do not want to make the frosting recipe below. 

Ingredients for Eclair Cake 

Vanilla Pudding  - instant vanilla pudding 

Whipped Topping  -  like Cool Whip, can also make your own whipped cream

Milk  - for the pudding use reduced-fat milk or whole milk. No substitutes. 

Graham Crackers - When the cake sets up in the fridge the graham crackers will get soft and cakey in texture. 

For the frosting - melted butter, milk, cocoa powder, and powdered sugar 

How to make Eclair Cake

Preheat the oven to 425 degrees F. 

Stir pudding mix, whipped topping, and milk together in a medium bowl until well blended.

Arrange a single layer of graham cracker squares in the bottom of a 8x8 inch baking pan. Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.

For Frosting: Microwave butter and milk just enough so that they are melted together. You do not need to boil it. Add cocoa and powdered sugar and blend together. This will be a runnier frosting/glaze. Pour over top of graham crackers and smooth out nicely.

Spread the frosting over the whole cake up to the edges of the pan. Cover, and chill at least 4 hours before serving.

Ingredients

  • 2 3.5 oz packages of instant vanilla pudding mix 
  • 1 8oz container frozen whipped topping, fat-free 
  • 3 cups of milk 
  • 1 16 oz package graham cracker squares

  • 6 tablespoons of milk 
  • 6 tablespoons of cocoa 
  • 2 cups powdered sugar
