    Festive Cranberry Mimosas

    Cranberry Mimosas is a great cocktail to make during Christmas and Thanksgiving. You don't always have to wait until the Holidays to make them, you can have these all year around!

    CRANBERRY MIMOSAS

    I have to admit that Mimosas are not one of my favorite drinks but when I tried it with cranberry juice instead of orange juice my mind was blown. I don't know what it is about mimosas made with orange juice whenever I have them. Maybe it's the bartender that makes them and they don't add in enough orange juice to my liking.

    There's this place here in downtown Fargo called Pounds and they have bloody mary and mimosa bars on the weekends. It is so fun putting all the candy and fruit on those sticks and coming up with a crazy concoction. They also had pineapple and orange juice out. Being able to make your own mimosa you can control the amount of juice and champagne that goes into your cocktail.

    To make a cranberry mimosa for a crowd of people combine ½ a gallon of cranberry juice and 1 bottle of champagne. That would make roughly 4 to 6 servings but if you would like to make a single serving for yourself pop open that bottle of champagne. I tend to like equal my mimosas on the sweeter side and I will add more juice than champagne. A standard mimosa measurement is 2 ½ oz (1 part) Orange juice and 2 ½ oz (1 part) Champagne.

    How to make a Weight Watcher Friendly Mimosa

    If you are looking to figure out points for a mimosa 2 ½ oz of champagne is 2 smart points. Do not use regular juice for this because it is loaded with sugar and a lot of points. Instead, look for Diet Cranberry or Diet flavored juices. 2 ½ oz of diet cranberry juice is 0 points so a whole mimosa would be 2 points! That's not bad.

    Garnishes for Mimosas

    When you can find fresh cranberries in your store I highly recommend getting a bag of those to make your drink look really festive for the Holidays. This cocktail is really great to make around Thanksgiving time. A fresh rosemary sprig may be too much for people but I've seen rosemary being used as a garnish for cocktails before in a margarita. It not only smells nice but looks nice in the drink. You can also get toothpicks and garnish them with different candies, fruits, etc.

    Ingredients

    • 2 ½ oz Cranberry Juice *see notes
    • 2 1 /2 oz of  Prosecco or Champagne
    • fresh cranberries (optional)
    • Rosemary leaf optional

    Instructions

    1. In a small glass pour in some cranberry juice (however much you like) and then top it with some Processco. Garnish with fresh cranberries (optional)
