Fruit Pizza

Fruit pizzas are the best way to make a dessert pizza of any kind. The crust is made from sugar cookie dough, the frosting is very to similar to the taste of cheesecake and you can top them with whatever fruit you like on top. I even left you with some ideas or different variations you can make such as tropical or a patriotic version for different Holidays. 

Mini Fruit Pizzas

The Cookie Dough 

We don’t want to use a crust that you would use to make a savory pizza here. This is a dessert pizza so sugar cookie dough or even brownie batter will work. If you have your own favorite sugar cookie dough recipe you can also use that to make this fruit pizza. 

To make a healthier fruit pizza,  I’ve seen people slice watermelon into a pizza dough shape and use that as a crust before.  

The cookie dough can be shaped into any size pizza you like. Want mini pizzas? Make them into cookie shapes. Want a large fruit pizza? Spread the dough out onto a pizza pan before baking. 

Frosting 

The frosting ingredients are cream cheese, whipped topping, sugar, and instead of vanilla extract I like to use almond extract here. It is something my grandma would always add to her frosting for sugar cookies all the time and it works really well with this fruit cookie. 

Fruit 

Use any type of fruit you have on hand. The fruit I used here were grapes, mandarin oranges, bananas, blueberries, and kiwi. To make a patriotic fruit pizza use strawberries, raspberries, and blueberries. Make it tropical and use mangos, pineapple, or kiwi. 

How to make Fruit Pizzas 

For whole pizza: Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool.

For mini fruit pizzas:  slice the cookie dough into ½’’ thick slices and evenly spread them out on a baking sheet. Follow the instructions on the back of the cookie dough package for baking. Let cool. 

Frosting: In a bowl, beat the cream cheese, whipped topping, almond extract,  and confectioners' sugar until smooth. Spread over crust. 

Arrange fruit on top.

Yield: 16-20 servings.

Ingredients

1 tube (16-½ ounces) refrigerated sugar cookie dough

1 package (8 ounces) cream cheese, softened

¼ cup confectioners' sugar

1 carton (8 ounces) frozen whipped topping, thawed

1 teaspoon almond extract 

2 to 3 kiwifruit, peeled and thinly sliced

1 to 2 firm bananas, sliced

1 can (11 ounces) mandarin oranges, drained

½ cup red grape halves 

1 cup  blueberries
