Hasselback potatoes are pretty fancy. They’re not your average mashed potatoes or baked potato side dish and can immediately impress anyone you make them for! Oven and air fryer instructions are included.
Carefully cut thin slits through the potato and bake the potato until it’s done. In an air fryer or oven, it doesn’t matter. The air fryer gets the outer edge extra crispy. Usually, that takes about an hour depending on what temperature you have your oven set too or how large the potatoes are. I like my Hasselback potatoes topped with sour cream, green onions or chives, crispy bacon, and don’t forget the cheese! Impress your dinner guests next time with this easy side dish.

Ingredients:
Potatoes -Yukon gold or Idaho potatoes will work just fine. Try to get potatoes that are all the same size so they get done cooking at the same time.
Cheese - Cheddar or Monterey Jack
Bacon - make sure the bacon is precooked before making the hasselback potatoes or you can cook the bacon in the oven the same time the potatoes are cooking.
Chives - fresh or dried
Sour Cream - don’t have sour cream? Plain nonfat greek yogurt also works.
How to Hasselback Potatoes
Preheat oven to 400 degrees F.
Using a wooden spoon as a cradle, place each potato in the spoon and make several parallel slits into each potato. Do not cut all the way through the potato.
Place the potatoes on a baking sheet lined with tin foil and spray with cooking spray. Sprinkle with salt and pepper. Bake for 45 minutes to 1 hr.
Once the potatoes and bacon are fully cooked (use a knife poke test), coat the potatoes with heaping helping of shredded cheese. Place the potatoes back into the oven until the cheese is melted.
Transfer to a platter and top with crumbled bacon, chives, or sour cream.
For air fryer method: Preheat air fryer to 350 degrees. Air fryer for 35 minutes. Test the potatoes with a knife. If they are don’t continue cooking for 25 minutes or until the potatoes are tender. Open the basket and sprinkle cheese in the inside slits of the potato. Top with bacon, chives, or sour cream.

- 4 medium russet potatoes potatoes
Cooking Spray

4 tablespoons fresh chives or dried
4 slices of cooked bacon, diced - 8 tablespoons of Shredded cheese
Instructions
- Preheat oven to 400 degrees F.

Continue air frying until the cheese is melted. 3 minutes.
- Take the potatoes out of the air fryer and top with bacon, chives, or sour cream.
