Healthier Shamrock Shake

Cure your Shamrock cravings with this lightened up version I made from Mcdonald's! It only requires 4 ingredients. 

This post needed a makeover with new pictures and updated points. (February 27th, 2019). You know Spring is almost here when Mcdonald's releases their Shamrock Shake. What other foods can you think of that fast food places release that remind you of Spring? Let me know in the comments below but this is one that I always remember. That, and since Mardi gras is usually the first week of March, Mcdonald's has their fish fillets on sale for Lent. I just love those. I can't wait to go and get a shamrock shake and I don't ever feel guilty about it because it's only one time a year that I get to enjoy that minty thick ice cream goodness. However, for those of you that would like a more point friendly version of this shake, here is a low point recipe for you. Makes 2 servings.

Mcdonald's small Shamrock shake is 23 points and that is pretty much my whole day worth of points. My version is only 6 points and I use Halo Top's low-calorie vanilla ice cream and unsweetened almond milk. Do not go overboard with the mint extract here. If you do, your shake will taste more like alcohol.

Do any of you go through bottles of mint or peppermint extract like crazy? I find that I only use it once for a recipe and then when I go back to use it half of the extract has been evaporated. 🙂

Ingredients

  • 2 cups of low-fat vanilla ice cream such as Halo Top
  • 1 ½ cups of unsweetened almond milk
  • 4 drops of green food coloring
  • ¼ tsp of mint extract
  • Extra toppings Cool Whip Light
  • Green sprinkles

Instructions

In a blender add all the four ingredients. Puree until smooth. Pour into two glasses and enjoy.

Makes 2 Servings, Serving Size: ½ of the drink
