Yes, you can make potato skins in an air fryer! The potato skin is super crispy in the air fryer and makes the perfect little bite with melted cheese, Greek Yogurt, and Scallions.

Ingredients
- 4 medium Yukon gold potatoes
- Cooking Spray
- 1/2 teaspoon of salt
- 1/8th teaspoon freshly cracked black pepper
- 8 tablespoons reduced-fat cheddar
- 8 tablespoons light sour cream
- 2 green onions, thinly sliced
Instructions
- Preheat air fryer to 400 degrees. Spray potatoes with cooking spray and season with salt and pepper (if desired).
- Set the potatoes in the air fryer basket and cook for 30 to 40 minutes. The potatoes are ready when a fork or knife can be easily inserted into them and taken out.
- Take the potatoes out of the oven and let them cool for 5 to 10 minutes. Cut the potatoes in half. Scoop out the insides so that there's just enough potato around the skin.
- Spray the potatoes again with cooking spray or butter spray to give them more flavor. Lay them on their flat side back in the air fryer basket and bake again for an additional 5 minutes.
- Open the basket up and sprinkle cheese on top of the potato skins. Continue cooking for 3 minutes or until the cheese has melted.
- Take the potatoes out of the air fryer using some tongs and garnish them with sour cream, green onions, and black pepper.
