Oh joy, another salad. You’re probably getting sick of seeing salads on just about every food blog right now aren’t you? Tis the season to start diets. Words like Healthy and Detox and smoothies are popping up everywhere now.
I told myself that I had to stop eating crap. I’ve been eating a lot of that lately too. Crap like Multi-grain tortilla chips with flax seed and guacamole. I keep on telling myself those chips are healthy, because they contain flax seeds in them. Pepperoni Pizza from the exclusive Sam’s Club and Animal Crackers. Some chocolate cookies stuffed with rolos, and breakfast nachos. That is a recipe that I’ve been trying to develop lately. Maybe that will make an appearance on here soon.
There now, doesn’t this picture of baby kale leaves make you feel 100% better just by looking at it? It made me feel better purchasing it at the store today.
This salad has kale, quinoa, feta cheese, dried cranberries, and cucumbers in it. You can top it with whatever protein you like. I was watching Food Network this weekend and Giada made a similar recipe to this and used farro, dried cherries, and goat cheese. Just swapped out 3 different ingredients.Print
- 2 cups of cooked quinoa
- 2 cups of kale, chopped
- 1/2 cup of dried cranberries
- 1 cup of reduced fat feta cheese
- 1/2 cup of chopped walnuts
- Your choice of dressing
- Combine all ingredients into a bowl and serve at room temperature. Dress the salad with you favorite dressing.
