Ice pops are so much more fun and colorful to look at when they are layered!  You can make these your own by picking 2 different colors of fruit to use.

  • 2 cups of diced pineapple
  • 2 cups of diced strawberries
  • 2 tbsp of honey
  • 2 tbsps of  lemon juice
  • 8 popsicle sticks

  1. Cut the leaves off the strawberries and chop them up.  Add 2 cups of diced strawberries to a food processor or blender with 1 tablespoon of honey and 1 tablespoon of lemon juice. Blend until smooth. Drain into a glass for pouring later on.
  2. Clean out your blender or food processor.
  3. Add the 2 cups of pineapple, 1 tablespoon of honey, and 1 tablespoon of lemon juice to the food processor and blend until smooth. Add to a glass for pouring.
  4. Start pouring (see notes) the strawberry layer into 8 of the ice pop molds.  You can eyeball this. It doesn't need to be exact at the amount. Then pour the pineapple puree on top of the strawberry layer and repeat this step until all the ice pop molds are filled to the top. Insert stick into the middle of each ice pop mold and freeze for 3 hrs.
