
Shrimp scampi is a seafood dish that consists of a sauce made out of butter, garlic, and lemon juice. Shake up your typical shrimp scampi meal with this recipe and add some freshly cracked black pepper to it to give it the lemon pepper taste. This was a recipe posted by Cooking Light back in 2013. I updated this recipe on August 2020.
Frozen shrimp is always a protein staple that I like to keep in my freezer at all times. It defrosts quickly. Just add the frozen shrimp to some water in a bowl and let it defrost for no longer than an hour. Places like Sam’s Club and Costco have large bags of shrimp that you can purchase and keep in your freezer. It is zero points on WW blue and purple plans.

Ingredients List
Orzo - Also known as risoni, is a form of short-cut pasta, shaped like a large grain of rice. Can be found in the pasta aisle.
Fresh parsley - dried can be used
Unsalted butter - so you can control the amount of salt that goes into this recipe
Peeled and deveined jumbo shrimp - Jumbo or Large
Fresh garlic - minced or chopped really fine
Lemon juice and black pepper are used for this recipe for the lemon pepper part, but you can always sub a lemon pepper seasoning that is already made for this.

How to make Lemon Pepper Shrimp Scampi
- Cook orzo according to package directions, omitting salt and fat. Drain. Place orzo in a medium bowl. Stir in parsley and ¼ teaspoon salt; cover and keep warm.
- While orzo cooks, melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Sprinkle shrimp with remaining ¼ teaspoon salt. Add half of shrimp to pan; sauté 2 minutes or until almost done. Transfer shrimp to a plate. Melt 1 teaspoon butter in a pan. Add remaining shrimp to pan; sauté 2 minutes or until almost done. Transfer to a plate.
- Melt the remaining 1 tablespoon butter in a pan. Add garlic to pan; cook 30 seconds, stirring constantly. Stir in shrimp, juice, and pepper; cook 1 minute or until shrimp are done.
- Serving size: ½ cup orzo mixture and about 7 shrimp

Ingredients

- 1 ½ pounds peeled and deveined jumbo shrimp
- 2 teaspoons minced fresh garlic
- 2 tablespoons fresh lemon juice
- ¼ teaspoon freshly ground black pepper
