This roasted delicata squash recipe is zero points and can be made in the air fryer. Delicata squash is the perfect alternative to french fries on Weight Watchers freestyle.

I've been scrolling through Instagram lately and noticed a couple of posts about delicata squash. I've been wanting to try it for a while now and yesterday I finally got the chance. Why did I wait so long? It's buttery, delicious, and they are the perfect size for 1 person living alone!

If you've never tried delicata squash before the best way to prepare it is by roasting it in the oven. It is just like any other squash. You cut it down the middle and scoop out the seeds. If you like roasted pumpkin seeds, you can save the delicata squash seeds and roast those just like pumpkin seeds. Place the squash on a sheet pan flesh side down and spray it with some cooking spray to keep it 0 points. Tis the season for pumpkin spice so to spice this up a bit I flavored it with some sugar-free maple syrup and pumpkin pie spice. So yummy you are going to love this squash. Give something new a try!
Cut the squash into crescent moon shapes and eat them like french fries! I added air fryer instructions to the post as well as oven instructions.
Ingredients Needed
2 - 3 lbs of delicata squash - 2 normal sized ones - can sub butternut squash to sweet potatoes
2 tablespoons of sugar-free maple syrup
Cooking Spray - no extra oils are needed like olive oil
1 teaspoon of pumpkin pie spice
salt and black pepper to season
Additional Ingredients:
These are optional add ins to try if you don't like pumpkin pie or maple syrup
Spices : cinnamon, cumin, thyme, brown sugar
Condiments : drizzle the squash with some tahini
What can I do with roasted squash?
You can make an arugula salad with the roasted delicata squash and add some crispy chick peas, goat cheese, quinoa, pomegranate, cranberries, apples, pecans, or walnuts. For a full meal add in some chicken for some protein.
Puree the squash for a soup if you don't want to make fries.
How to Make Roasted Delicata Squash
Preheat oven to 400 degrees.
Remove the bottoms of the squash so you can set it on the bottom. Cut delicata squash down the middle and scoop out all the seeds.
Spray a sheet pan with nonstick cooking spray. Use parchment paper for easy clean up. Cut the squash into moon size shapes and place them on a sheet pan in a single layer. Drizzle with maple syrup and sprinkle with pumpkin pie spice and
Set oven temp to 425 and bake for 25 to 30 minutes.
Or, Air fry for 8 minutes or if you don't have an air fryer
Storage Ideas
Place the leftover sqush in airtight container in the refrigerator. Leftovers will last up to several days.
