I’ve been scrolling through Instagram lately and noticed a couple of posts about delicata squash. I’ve been wanting to try it for a while now and yesterday I finally got the chance. Why did I wait so long? It’s buttery, delicious, and they are the perfect size for 1 person living alone!
If you’ve never tried delicata squash before the best way to prepare it is by roasting it in the oven. It is just like any other squash. You cut it down the middle and scoop out the seeds. If you like roasted pumpkin seeds, you can save the delicata squash seeds and roast those just like pumpkin seeds. Place the squash on a sheet pan flesh side down and spray it with some cooking spray to keep it 0 points. Tis the season for pumpkin spice so to spice this up a bit I flavored it with some sugar-free maple syrup and pumpkin pie spice. So yummy you are going to love this squash. Give something new a try!
