
Mojito cupcakes are the boozy version of the classic cocktail! The cupcake is a regular vanilla cupcake that has a rum and mint glaze on top of it. Then it gets frosted with a minty flavored frosting.

I'm pretty sure there is something wrong with my top oven. Half of these cupcakes turned out, and then the other half of them had collapsed. I followed the recipe to a T and I've made cupcakes plenty of times. Should have taken a picture of the ones that turned out and the other ones that didn't. That was the oven I had back at my old house. I made these cupcakes again with my new General Electric one and they turned out pretty good.

How to Make Basic Cupcakes
Preheat the oven to 350 degrees F and line a 12-cup muffin pan with paper liners.
Prepare your batter.
Vanilla: Whisk 1 ⅓ cups flour, 1 teaspoon baking powder and ½ teaspoon salt in a bowl. Beat 1 stick softened butter in a separate bowl with a mixer on medium-high speed until smooth, 1 minute. Add 1 cup sugar and beat until creamy, 4 more minutes. Beat in 2 eggs, one at a time, then 2 teaspoons vanilla. Beat in the flour mixture in three batches on low speed, alternating with ½ cup milk total. Beat on medium-high speed until just combined.
Fill cupcake liners with batter and bake for 18 to 20 minutes or until a tooth pick comes out clean.
Simmer 2 tablespoons each lime juice and white rum with ¼ cup each mint leaves and sugar until the sugar is dissolved; let cool, then brush on the cupcakes.
Make Vanilla Frosting. Beat 1 ½ sticks softened butter, 3 cups confectioners' sugar and a pinch of salt with a mixer on medium speed until just combined. Add 2 teaspoons vanilla and beat on medium-high speed until creamy, 3 minutes. Beat in 2 tablespoons milk until fluffy, 1 more minute.
