Eyeball Oreo truffles 017

These Oreo Truffles are all dressed up for Halloween with fake blood and eye balls on top of them. They are fun to make and you can even get the kids involved!

Do you know what's fun? Making these eyeball oreo truffles for Halloween. Around Halloween time, you can get gummy eyeballs at Wal-Mart.  The blood is just red food gel and I used almond bark to dip the truffles in.  You can make these light or Weight Watcher friendly by using those 100 calorie oreo crisp packets and fat free cream cheese!

There are a lot of different variations on monster truffles on the Internet that use different colored candy melts. Just have fun and be creative making these!

What Ingredients do I need? 

In this section, you can find substitutes or suggestions for certain ingredients. I also will try and list out what the ingredients' purpose is for. 

Cream Cheese  - Boneless skinless chicken breast, cut into even size cubes 

Oreos  - To help lower the calories of these  Oreo Truffles I used 3 100 calorie packets of Nabisco Oreo Crisps 

Almond Bark -  There are different variations of these monster truffles online. Instead of white almond bark or white chocolate use different fun colors of Candy Melts like purple, orange, or green.

Red Food Coloring Gel 

Gummy Eyeballs or Spooky Eye Toppers - 1 Lb. Resealable Stand Up Candy Bag - Edible Baking Decorations - Funny White Googly Eyes for Cupcakes, Cakes, Cookies, Brownies

How to make Monster Truffles  

  1. In a food processor combine the cream chees and oreos.
  2. Roll the combined oreo mixture into 1 inch balls.
  3. Dip the balls in melted almond bark. Using a spoon to lift the covered oreo truffle in chocolate and tap the edge of the bowl to get rid of an excess chocolate.
  4. Place the gummy eyeball on the eyeball right away and let the oreo truffle set until the chocolate has hardened.
  5. To make the blood shot eyes, spread the food gel in squiggly lines across the eyeball.
