Nectarine Galette

Galettes are a beautiful Summer dessert made with pastry dough and fresh fruit. Wait until your favorite stone fruit is in season to make this and you will not be disappointed. 

What is a galette? It’s a french pastry similar to a pie. Instead of placing the dough in a pie dish you put it on a baking sheet instead and add thinly sliced fruit to it. 

How to make Galette Dough 

Already made pie crusts are always an option when making a galette. It will make your life easier if you don’t want to make your own dough. 

If you want to make your pie dough recipe, I really like this one from Ina Garten. It’s her recipe for perfect pie crust. 

Pick a Fruit 

Like I mentioned above, I used nectarines because I had them in my fridge. Stone fruits will work best for galettes. For a shorter baking time, prepare the fruit so that it is thinly sliced. Add some sugar for sweetness and place the fruit on top of the dough. 

How to make a Galette

Heat oven to 375° F with the rack in the lowest position.

Place the pie crust on a parchment-lined baking sheet. Leaving a 2-inch border, top with the nectarines or peaches. Sprinkle with 2 tablespoons of the sugar and the butter. Fold the edges of the dough toward the center, overlapping slightly and partially covering the fruit. Brush the dough with 2 teaspoons water and sprinkle with the remaining tablespoon of sugar.

Bake until the juices are bubbling and the crust is golden (tent with foil if the crust browns too quickly), 35 to 40 minutes.

Slice into 8 equal pieces. Serving size: 1 slice.

Ingredients

  • 1 refrigerated rolled piecrust
  • 3 thinly sliced nectarines or peaches
  • 3 tablespoons turbinado sugar
  • 2 tablespoons unsalted butter, cut up
