
Back when I first started this blog, I was a HUGE fan of Food Network and I just love trying all the celebrity chef recipes like Paula Deen, Alton Brown, Bobby Flay, Ina Garten, and the Pioneer Woman to name a few. This recipe was posted back in 2011 and has been updated. 12/27/19
Monster Mash is a recipe that comes from Paula Deen and it is a delicious party dip recipe made with refried beans, cheese, Rotel tomatoes, and taco seasoning. She made it on a Halloween episode with her son Bobby Dean. It's kind of sad that her show isn't on anymore and she's been replaced by another Southern chef that looks almost like her dare I say. I can't remember her name but she's also in a lot of the competition shows.

How to make Monster Mash
Preheat the oven to 325 degrees F. Lightly butter a 2-quart baking dish.
In a medium bowl, combine all of the ingredients. Spoon the mixture into the prepared baking dish. Bake until hot and bubbly, about 25 to 30 minutes. Remove the dish from the oven and top with the remaining cheese. Bake until the cheese is melted. Serve with tortilla chips.
Tips for Monster Mash
Make your own homemade taco seasoning instead of using packets from the store.
Various types of beans can be used such as pinto, black beans, kidney beans, or in this case a good ole can of refried beans. Bean dip can be served hot, cold or even as a hot dish. It can also be made ahead of time.
What do you serve with bean dip? This is just a base bean dip recipe but you can top the bean dip with so many extra toppings. Top the bean dip with sliced green onion, cilantro, avocado, jalapeños, chopped tomatoes, and queso fresco. Serve warm with tortilla chips.
How long does bean dip last? Bean dip can last up to a week in the fridge. To reheat, heat the bean dip in the microwave until it is warm.
Is bean dip good for you? Bean dip is low in calories and if you use the fat-free refried beans they are 0 points on the WW blue and purple plans. Beans also contain a good amount of protein and fiber and as I mentioned above, you could probably eat this as a meal with some tortilla chips. 🙂
