Peanut Butter Cup Blondies

Peanut butter cups are one of my favorite candies and if you’re a peanut butter lover then you are going to love these peanut butter cup blondies. 

So Aldi has their own peanut butter cups now. You can read about that here on my other blog. They are pretty addicting and you can’t stop eating after one. A serving size is 3 and that’s pretty bogus. It should be the WHOLE bag. They are that good. These peanut butter cups are so famous, that Aldi is sold out at some stores across the U.S. Evidently not in my area. No one knows about them yet and there aren’t very many Aldi nerds here. Plenty of peanut butter cups for everyone. 

These peanut butter cups go great with these blondies and they are so easy to cut up with a knife. You don’t have to take them out of their wrapper or anything.  

How to make Peanut Butter Cup Blondies 

1. Preheat oven to 350°.

2. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 3 ingredients (through salt), stirring well with a whisk. Combine peanut butter and next 4 ingredients (through eggs), stirring well. Add peanut butter mixture to flour mixture; stir until combined. Stir in chocolate chips.

3. Scrape the batter into a 9-inch square metal baking pan lightly coated with cooking spray, and arrange the peanut butter cups over batter. Bake at 350° for 19 minutes or until a wooden pick inserted in center comes out with moist crumbs clinging. Cool in pan on a wire rack.

As you can see they look kind of messy with the melted peanut butter cups on top but I can guarantee they are still good!

Are these bars Weight Watcher Friendly?

Treats like these are kind of frowned upon considering the fact that they aren’t very  WW friendly. A lot of sugar and saturated fat make a recipe higher in points. I did go ahead and leave the points info for 1 bar down below and it is 7. Each bar is 153 calories. Nutrition info was figured out using the Choceur peanut butter cup brand from Aldi. If you are using a different brand of peanut butter cups, you will have to update the points. 

Tips for Peanut Butter Cup Blondies 

Don’t like peanut butter cups? Use your favorite candy bar. Snickers, Milky Way, Kit Kat’s, or M&M’s would be good. 

Can I use a sugar substitute to help lower the points? Sure, I’m not familiar with the points or conversions for everyone so you will have to look up that online. 

Before adding the batter to the pan, spray it down really good with pam cooking spray or place a piece of parchment paper in the pan for easy cleanup!

Ingredients

5 ⅗ ounces all-purpose flour (about 1 ¼ cups)

1 cup granulated sugar

½ teaspoon baking powder

¼ teaspoon salt

⅓ cup creamy peanut butter

¼ cup butter, melted and cooled slightly

2 tablespoons 2% reduced-fat milk

1 teaspoon vanilla extract

2 large eggs, lightly beaten

¼ cup semisweet chocolate chips

Cooking spray

12 (0.75-ounce) peanut butter cups, coarsely chopped

    These look scrummy and I can see why you liked them so much! Do not envy the self control you must be needing to resist these but im sure even if you had a few too many you would look equally as beautiful on your big day 🙂
