Peanut Butter Pretzel Bites

If you're feeling down or sick, these pretzel bites can really cheer you up. Have you tried the pretzel m&m's? They kind of remind me of these, but without the peanut butter. I really didn't care for the pretzel m&m's, but I do like pretzels. I'm more of a fan of the peanut butter m&m's. These pretzel bites can really cure your craving from something sweet and salty.

This will probably be one of my last posts for awhile. This weekend we get our new kitchen cabinets and we're going to start our kitchen remodel. A good thing, the weather is getting nicer so that we can use our grill outside. The oven is going to be turned off. I can't wait for it to be done! I'm going to take some pictures and post them on here for everyone to see.

Scale

Ingredients

1 cup creamy peanut butter
2 tablespoons softened butter
½ cup powdered sugar
¾ cup brown sugar
Pretzels
1 bag semi-sweet chocolate chips

Instructions

1. Line a baking sheet with wax paper and set aside.
2. In the bowl of a stand mixer fitted with the paddle attachment, beat peanut butter and butter until combined. Scrape down bowl, add sugars and beat until combined. You should be able to roll the mixture into balls without sticking to your hands. If needed, add more powdered sugar until you reach a consistency that is easy to roll.
3. Roll the mixture into small balls, about 1 teaspoon of mixture for each ball, and place on prepared baking sheet. Sandwich the balls between two pretzels and place in the freezer for 30 minutes.

I melted the the chocolate after I got done sandwiching the peanut butter between the pretzels. I think they taste a lot better when cold, so I kept them in our fridge.
