Post Holiday Detox Salad

So, how was everyone's Christmas? There was a HUGE Winter Storm over the weekend that made travel really difficult. My Mom was supposed to have a lot of people over on Christmas Day and all of them cancelled. We were in an Ice Storm warning and when we got out of the movie theater Christmas Day it was raining sleet and snowing at the same time. The next day the roads froze over and there was a nice thin coat of ice on the ground. I had to work the next day and was driving 15 mph. By the time I got off work, the roads were way better and you could actually see the ground. Pretty scary stuff. Why do I live here?

Did you eat a ton of crappy yummy good for you food over the Holidays? I did. All the appetizers we ate on Christmas Eve had some kind of cheese in every single one of them and by the end of the night my stomach was in quite a bit of pain. I'm making up for that with this salad. I've had the "Winter Blues"  lately with the weather and wanting to lose weight, it's been tough. With all the yummy and healthy ingredients in this salad you will feel a 150% better eating this after all the unhealthy food you ate this weekend.

Ingredients

  • 1 bag of fresh spinach
  • 2 naval oranges
  • 2 tablespoons dried cranberries
  • 2 tablespoons sliced almonds
  • ¼ can of drained chickpeas
  • feta cheese

Instructions

  1. Toss all ingredients together in a bowl and enjoy with your favorite dressing. I used poppyseed dressing.
