Pumpkin Bread with Honey Glaze

Let the Fall baking begin! There's so many recipes I want to make, its ridiculous. You might just be seeing dessert recipes on this blog for awhile, but that is ok. I will try to make them all healthy and as low points as I can. Can't guarantee that.

Pumpkin Bread with Honey Glaze - super moist low fat pumpkin bread! Perfect for Fall baking

We'll start the baking with this pumpkin bread. It's super moist and I adapted the recipe from a Better Homes and Garden Fall edition magazine that I got. That magazine is really awesome, there's so many drool worthy recipes. They were easy to adapt as well. The original recipe called for oil and so I subbed unsweetened applesauce, reduced the amount of eggs, and added in some more spices. You've got the most moist pumpkin bread ever. The original recipe called for ½ of mashed bananas, but I left those out. Without the glaze the bread is 3 points a slice. With the glaze it's 4. Enjoy!

  2. In an extra large bowl, beat sugar, and applesauce with a mixer on medium until combined. Add eggs, one at time, beating after each addition. Add flour mixture and the water alternately , beating on low after each addition just until combined. Beat in pumpkin. Spoon batter into prepared pans.
  3. Bake 50 to 60 minutes or until a toothpick comes out clean. Cool loaves in pans 10 minutes. Remove from pans; cool on wire racks. Wrap loaves and store overnight before serving. To serve, spoon Honey Glaze over bread.
