
Let the Fall baking begin! There's so many recipes I want to make, its ridiculous. You might just be seeing dessert recipes on this blog for awhile, but that is ok. I will try to make them all healthy and as low points as I can. Can't guarantee that.

We'll start the baking with this pumpkin bread. It's super moist and I adapted the recipe from a Better Homes and Garden Fall edition magazine that I got. That magazine is really awesome, there's so many drool worthy recipes. They were easy to adapt as well. The original recipe called for oil and so I subbed unsweetened applesauce, reduced the amount of eggs, and added in some more spices. You've got the most moist pumpkin bread ever. The original recipe called for ½ of mashed bananas, but I left those out. Without the glaze the bread is 3 points a slice. With the glaze it's 4. Enjoy!



Pumpkin Bread with Honey Glaze
- Yield: 2 loaves (32 slices) 1x
Ingredients
- 3 cups flour
- 2 tsp. baking soda
- 1 tsp ground cinnamon
- ⅛ tsp ground cloves
- 1 cups sugar
- 1 cup applesauce (unsweetened)
- 2 large eggs
- ⅔ cup water
- 1 15-oz can of pumpkin
- Honey Glaze
- ½ cup of powdered sugar
- 1 tablespoons honey
- 1 tablespoons milk
Instructions
- Preheat Oven to 350 degrees. Grease bottoms and ½ inch up sides two 9X5-inch loaf pans; set aside. Combine the first 4 ingredients through cloves.
- In an extra large bowl, beat sugar, and applesauce with a mixer on medium until combined. Add eggs, one at time, beating after each addition. Add flour mixture and the water alternately , beating on low after each addition just until combined. Beat in pumpkin. Spoon batter into prepared pans.
- Bake 50 to 60 minutes or until a toothpick comes out clean. Cool loaves in pans 10 minutes. Remove from pans; cool on wire racks. Wrap loaves and store overnight before serving. To serve, spoon Honey Glaze over bread.
- Slice each loaf into 16 equal slices. Serving size: 1 slice.
